How should one appreciate the floral and fruity aromas in coffee? As I pondered this question, numerous factors that might influence the tasting of a cup of coffee came to my mind.
We often emphasize the importance of origin and bean variety for coffee flavor. For example, African specialty beans typically exhibit floral and fruity aromas, albeit with varying intensities. In terms of bean varieties, Gesha, for instance, has more pronounced floral and fruity aromas.
In fact, the processing methods of coffee cherries should not be overlooked. Through cherry processing, such as natural and washed methods, coffee transforms from fruit into dried green beans ready for bagging and export. Different processing methods impart completely different quality and flavor characteristics to the coffee.
This is not only because Ethiopia, as the birthplace of coffee, is a textbook presence in the coffee world, but also because of Ethiopia's unique geographical location. Each sub-region has different climate types, resulting in diverse coffee flavors.
Despite the varying flavors of Ethiopian beans, they all possess a charming floral and fruity aroma. Many people have fallen in love with specialty coffee through the distinctive floral and fruity aromas found in Ethiopian beans.
Compared to the natural-processed red cherries, the washed-processed white cherries have a cleaner taste, presenting citrus and cream aromas with a matcha-like tea sensation. Through red and white cherries, we can experience how different processing methods bring completely different flavor expressions to coffee.

All coffee processing methods aim to remove the skin from fresh coffee cherries to obtain the beans (especially removing the 1-2mm translucent mucilage layer). However, due to different objective conditions, various processing processes have gradually evolved, ultimately resulting in vastly different impacts on flavor.
