Bourbon coffee was originally cultivated on Réunion Island, which was known as Bourbon Island before 1789. When the green cherries ripen, they display a bright red color, while Yellow Bourbon cherries remain yellow. Due to its lower yield and less resistance to wind and rain, it hasn't been widely cultivated. However, when grown at high altitudes, it exhibits excellent flavor characteristics.

The enticing red color of ripe coffee cherries resembles a bride-to-be adorned in ceremonial robes. Yet, the Yellow Bourbon growing in Brazil's Cerrado region believes marriage is the tomb of love - a rebellious girl who eloped, dressed in distinctive golden yellow. With subtle citrus notes balanced by smooth, gentle acidity, nutty flavors complemented by rich chocolate aroma, and the characteristic rounded, substantial sweetness of the Bourbon variety, this girl in yellow is destined to have followers wherever she goes.

Bourbon coffee (French: Café Bourbon) is coffee produced from the Bourbon cultivar of Arabica coffee trees. Bourbon coffee was originally cultivated on Réunion Island, which was known as Île Bourbon before 1789. It was later occupied by the French and connected to both the African continent and Latin America, now becoming one of the two most popular Arabica coffee production regions globally. Bourbon coffee is typically grown at altitudes of 3,500 to 6,500 feet (1,062–1,972 meters).

The Bourbon variety originated on Bourbon Island in the Indian Ocean (now called Réunion Island) and is a sub-variety that mutated from Typica. Along with Typica, it belongs to the oldest existing coffee varieties. When green cherries ripen, they display a bright red color, while the Yellow Bourbon variety resulted from hybridization between Bourbon and other varieties. Due to its lower yield and less resistance to wind and rain, it hasn't been widely cultivated. However, when grown at high altitudes, it exhibits excellent flavor characteristics and has become more common in recent years.

As a variant of the Bourbon variety with yellow skin, Yellow Bourbon is less resistant to wind and rain, resulting in lower yields but exceptional quality. With its captivating flavor profile, Yellow Bourbon has consistently led in Brazil's Cup of Excellence (COE) competition throughout the years.

Among Brazil's numerous coffee varieties, Yellow Bourbon stands out as one of the most exceptional. While regular Bourbon cherries transition from green to yellow to red, Yellow Bourbon cherries remain yellow. Yellow Bourbon grown at high altitudes and processed using natural methods yields exceptionally superior flavor.
