FrontStreet Coffee - Coffee Flavor Wheel Usage Guide
In the early 1940s, European and American regions pioneered the clarification of food sensory concepts, establishing a comprehensive theoretical system and application methods through a series of studies. China's sensory evaluation started relatively late, with scholars only beginning research on aroma and texture evaluation in 1975. It wasn't until the 1990s that "sensory evaluation" was widely applied in food science research, and only in this century was the interdisciplinary scientific system of "sensory" established.
Step 1: Observe Carefully, Accept Completely
The new flavor wheel looks beautiful, just like a perfect cup of coffee. It visually and intuitively presents the comprehensive and ever-changing flavors of coffee.
Step 2: Drink Coffee, Drink Coffee, and Drink More Coffee!
The coffee flavor wheel can be used for both daily coffee tasting and professional cupping. However, in both different situations, the key is for you to mindfully experience the various sensory experiences that coffee provides in your mouth.
Step 3: Start from the "Heart"
Our original intention in designing this was to hope that all tasters would start from the innermost circle and gradually work their way outward. The most common flavor descriptors are located closer to the center, while the further outward you go, the more细分 their characteristics become. Tasters can stop at any circle at any time, but undoubtedly, the further outward we go, the more detailed our description of flavor characteristics becomes.
Step 4: Read the Coffee Sensory Dictionary
The design of a series of flavor items in the dictionary aims to establish a standard - it can enable sensory-trained cuppers to form a review panel, evaluate coffee, and conduct scientific analytical research.
Step 5: Try the Various Reference Items in the Dictionary
Each flavor item in the WCR Coffee Sensory Dictionary has related flavor reference items, and these reference items are easily available in supermarkets or online. However, please remember that flavor reference items are edible, while aroma reference items should not be consumed.
Step 6: Once Again, Start from the "Heart" and Return to the Original Intention
When we have the knowledge base of the Coffee Sensory Dictionary in our minds (even if we only remember one or two flavor items), we can start again from the center of the coffee flavor wheel, beginning with that specific flavor item.
Step 7: It's Your Turn - Describe Using the Vocabulary You've Learned
The greatest significance of the new flavor wheel is that it can provide a unified common language for coffee tasters. This is extremely meaningful.
Step 8: Show You Some Colors - Utilizing the Colors of the Flavor Wheel
With this understanding, we begin to focus on the color choices on the flavor wheel, striving to identify the sensory connections between each flavor item and related colors, and select those colors.
