The Mandheling growing regions include one at Lake Toba in North Sumatra Province (2.5 degrees north latitude) and another at Lake Tawar in Aceh (4.5 degrees north latitude). The two lakes are more than 300 kilometers apart, with a cultivation history that differs by at least thirty-six years. Traditional Mandheling comes from the mountainous area around Lake Toba, mainly cultivated by the Mandailing and Batak ethnic groups; while the more recent Lake Tawar Mandheling is cultivated by the Gayo people.

1. High Mountain Volcanic Lake Creates High-Quality Coffee

Lake Toba is the world's largest volcanic lake. This diamond-shaped lake is 100 kilometers long, 30 kilometers wide, covers an area of 1,130 square kilometers, and is a high-altitude lake with an average elevation of around 900 meters.

The mountainous region is already naturally foggy, and the abundant water vapor from Lake Toba makes the nearby mountains frequently shrouded in clouds and mist. This special environment enables this region, despite not having the highest altitude, to produce high-quality Mandheling coffee. The Mandheling Lindong growing area, located at 1,300 meters above sea level on the southern side of Lake Toba, enjoys these unique natural advantages. Lindong receives 2,800 millimeters of annual rainfall with an average temperature of 22-27 degrees Celsius, allowing for two coffee harvest seasons per year.

2. Unique "Wet Hulling" Method Creates Super Thickness

Lindong Mandheling uses Sumatra's unique wet hulling processing method, which results in super thickness and distinct caramel candy aroma!

The wet hulling method differs from regular washed and natural processing methods. For washed, honey-processed, or natural processed beans, the parchment husk is retained until the coffee bean dehydrates and hardens, moisture content drops to 12%, or after being stored and aged for 1-3 months, only then is the parchment removed. However, wet hulling removes the parchment while the bean is still moist and soft, with moisture content as high as 30%-50%, then continues drying, which significantly shortens drying time.

In Central and South America and Africa, natural and washed processing methods require two weeks for coffee beans to complete dehydration, but Sumatra's humid climate led ancestors to develop the unique wet hulling method according to local conditions. By removing the parchment early to accelerate bean drying, coffee beans can reach 12%-13% moisture content in just two to four days.

Due to the shortened drying time, the fermentation period and acidity of the coffee beans are greatly reduced, but the thickness increases, with distinct caramel and fruit notes, slightly woody and herbal flavors—this is the classic "terroir taste" of Sumatran coffee.

3. Stable Production, Cost-Effective Choice

Compared to the rare and expensive Golden Mandheling and Top Golden Mandheling, Lindong Mandheling with stable production and availability, offering high cost-effectiveness, is more suitable for commercial cafe use. When it comes to quality, it must be said that G1 grade Lindong is truly impressive!
