FrontStreet Coffee - Introduction to Salvadoran Coffee
El Salvador is a small, volcano-dotted country that earned the title "Coffee Kingdom" from its abundant production. With so many volcanoes within its borders, it is also known as the "Land of Volcanoes." The volcanic soil has produced fine coffee trees and forged a close bond between Salvadorans and their coffee.
Striking black-sand beaches, exquisite coffee from this compact nation, a distinctive exotic charm: all of these come together in Central America's smallest country.
Salvadoran coffee inherits the gentle manner of Central American coffee, with an overall softness, a subtle acidity, and a pleasing sweetness. At the same time it has a character of its own: an aromatic flavor with a touch of acidity that is exceptionally smooth; a purity free of any off-flavors and an excellent balance; a smoothness that evokes creamy chocolate; and a rich mouthfeel that gives the coffee depth and a long-lasting aftertaste.
Coffee Varieties and Processing
Coffee is one of the country's main agricultural industries, and production has grown with steady government support. Under the National Coffee Research Institute, efforts to improve varieties and refine production techniques have delivered real results. In 1958, El Salvador's signature variety, Pacamara, was born. It is a cross of Maragogype, also called elephant bean, with the Bourbon mutation Pacas, and the name Pacamara blends the names of both parents.
Processing is primarily washed, with some natural lots as well.
Washed Processing Method
1. After harvesting ripe cherries, an initial sort removes impurities, defective beans, and floaters, exactly as in the natural method.
2. Pulping
3. Fermentation to remove the mucilage
4. Drying
Once washing is complete, the beans still have to be sun-dried or machine-dried down to a moisture content of 12%. Because the pulp has already been removed, there is no need to worry about the mold that can threaten natural-processed lots during drying. The dried parchment beans are also softer than those that keep the pulp and skin in the natural method, so they can be hulled in a hulling machine to yield green coffee beans.
Knowledge Point
El Salvador is the smallest country in Central America, yet it is one of the world's most efficient coffee producers.

FrontStreet Coffee Recommendation
If the balance and clarity of a well-executed washed coffee are what you enjoy, FrontStreet's washed selection is a good place to start. FrontStreet's Kenya Little Tomato is one of the standout examples of the style: a Kenyan specialty washed bean built on the bright acidity of cherry tomato and smoked plum, with a full, juicy body. Grown in Kenya's Thika region at 1,550-1,750 meters from the classic SL28 and SL34 varieties, it goes through Kenya's signature 72-hour double-washed fermentation, which draws out the fruit while keeping the cup clean and pure. FrontStreet roasts it light to preserve that lively acidity.
In the cup you can smell rich dried tomato and florals before you even brew. The first sip brings clear cherry tomato and smoked plum, an acidity that is bright and solid like freshly squeezed juice, layered with pear and black plum in the middle, a clean, lingering finish, and a hint of yellow-sugar sweetness and green tea. It is a fine companion to the washed, balanced profile that defines so much of Central American coffee.
