FrontStreet Coffee - Introduction to El Salvador Coffee Growing Conditions
The Republic of El Salvador, commonly referred to as El Salvador, is the smallest country in Central America. This country, with a land area smaller than China's Hainan Province, holds an indispensable place in the coffee world.
Characterized by mountains and plateaus with numerous volcanoes, it is known as the "Land of Volcanoes." The Santa Ana active volcano, with an elevation of 2,385 meters, is the highest peak in the country.
Active volcanic activity has brought mineral-rich volcanic ash, while the significant temperature differences between day and night in mountainous and plateau regions, along with abundant rainfall, have created extremely favorable natural conditions for coffee cultivation in El Salvador.
Climate
El Salvador has a tropical climate with an average annual temperature of 28°C. Mountainous areas receive over 1,800 mm of annual rainfall with a cool climate, while coastal and lowland regions have a hot and humid climate with approximately 1,000 mm of rainfall.
Varieties
Typica, Bourbon, Pacas (Bourbon mutation), Pacamara (hybrid of Pacas and Maragogype "elephant bean")
El Salvador possesses famous and ancient coffee tree species and practices monoculture of different coffee varieties, distinguishing it from other coffee-growing countries. (Many countries mix some disease-resistant, easy-to-survive coffee species or other hybrid coffee varieties to increase yield and reduce risk)
Monocultured coffee trees are susceptible to leaf rust disease, especially Bourbon, which lacks sufficient cold resistance to combat this disease. Both Pacas and Pacamara are genetically derived from Bourbon. Coffee plants prefer mild climates, and to avoid the impact of excessive temperatures and direct sunlight on coffee bean quality, coffee trees in El Salvador are mostly grown under tall tree shade (shade grown coffee).
Flavor Profile
Distinct layers with high complexity, featuring both bright floral notes and mature fruit acidity, complemented by nutty, creamy, and chocolatey aftertaste.
Mouthfeel
Balanced flavor with moderate acidity, sweetness, and bitterness.
Knowledge Point
First cultivated by Salvadoran researchers in 1958. Pacamara is an excellent variety rarely achieved through artificial selection.
