FrontStreet Coffee - Bourbon Variety Introduction
There are hundreds of coffee varieties, with Arabica accounting for about 70% of the world's coffee production. Although Arabica is more susceptible to pests and diseases than Robusta, its flavor and aroma are more appealing to most consumers.
Producers choose to grow certain crops for many reasons: yield, flavor expression, local environmental conditions, and more. Being able to identify coffee varieties is very important, as this avoids confusion between batches during harvesting and processing. If two or more batches of coffee beans are mixed, it could lead to flavor confusion and cupping scores below expectations.
Bourbon shares the same tall height and conical shape as Typica, but Bourbon has more secondary branches, appearing denser. The main trunk and branches are thicker, making it more robust than Typica but with relatively less flexibility. The branches are more dense, and this increased density means Bourbon can produce about 30% more coffee cherries than Typica.
Bourbon leaves are wider than Typica, with a rough texture and wavy edges. Young leaves are usually green but sometimes have bronze tips. The coffee cherries are round and turn various colors when ripe, such as red, orange, or yellow (but the color is consistent on the same plant).
Yellow Bourbon
Yellow Bourbon is a Bourbon variety unique to São Paulo state, Brazil. The coffee fruit does not turn red when ripe but instead shows an orange-yellow color, hence the name "Yellow Bourbon." Yellow Bourbon grown in high-altitude areas exhibits excellent flavor expression, having swept the Brazil "Cup of Excellence" competition for two consecutive years, almost taking all top three prizes and becoming popular in the specialty coffee world! It has nutty flavors, with a balanced, rich, and non-bitter taste.
