The Cauca Department belongs to the coffee-growing region certified by Colombia's Designation of Origin, located in southwestern Colombia, adjacent to the Nariño Department and Huila Department, and is also an important producing area for Colombian specialty coffee.
80% of Cauca Department consists of mountainous terrain with an average altitude of around 1,800 meters, reaching up to 2,100 meters at its highest points. The eastern and central regions feature parallel mountain ranges that are part of the Andes Mountains. The central mountain range includes two main volcanoes (Sotara and Petacas), while the boundary is marked by the winding, perennially snow-capped Huila mountain range. The Cauca coffee-producing region is surrounded by towering mountains. These magnificent highlands not only block air currents and moisture from the Pacific Ocean but also prevent trade winds from the south. Combined with its proximity to the equator, this creates a stable, humid climate with abundant sunshine throughout the year. The region's unique topography, climate, rainfall patterns, and nutrient-rich volcanic ash soil provide an exceptionally favorable and unique environment for growing high-quality coffee.
The most significant climatic difference between Cauca and other producing regions comes from its relatively large diurnal temperature variation, with an annual average temperature difference of approximately 11°C, while daytime average temperatures hover around 18°C. This diurnal temperature variation is a crucial factor in producing high-quality coffee. The relatively low nighttime temperatures combined with high altitude slow down the growth rhythm of coffee plants, allowing coffee seeds and beans to fully absorb nutrients from the coffee fruit. This results in Cauca coffee having better acidity and a special sweetness that is particularly praised in the industry.
Following Colombia's excellent traditions, all coffee from the Cauca region is hand-picked and processed using the washed method, ensuring the high quality of its green coffee beans. Premium Cauca coffee typically exhibits rich floral notes, high acidity, pleasant sweetness, medium body, and special clean, mild flavors. It mainly showcases a series of distinctive flavors similar to berries, caramel, dark chocolate, and grapefruit, with a sweet aftertaste that leaves a lasting impression.
