FrontStreet Coffee - Kenya Double Washed Introduction
So-called coffee processing methods refer to "the process of coffee fruit turning into coffee green beans." Traditionally, coffee has three main processing methods: washed, natural, and honey. Of course, there are many other processing methods, such as Indonesia's wet-hulling method, which is also considered a processing method, but this processing method is relatively rare.
Currently, the most widely used processing method is the washed method, which can give coffee higher acidity and more stable quality. This processing method uses fermentation to remove the mucilage layer. After removing the coffee cherry peel, the softened mucilage from fermentation is washed away using the washed method, and then mechanical drying is used. During the drying process, it takes 1 to 2 days. Of course, natural processing can also be used, but it takes relatively longer, requiring 3 to 16 days. Additionally, washed processed coffee beans have excellent appearance, thus winning people's favor.
Kenya-style Washed (Soaking Processing, K72 Washed)
As the name suggests, this processing method first emerged in Kenya, and it is also used to process coffee beans in Rwanda and Burundi.
In fact, compared to ordinary washed processing, Kenya-style processing does not have much difference. The difference is that after completing the washed fermentation process, the parchment coffee beans are soaked again in clean water in a tank for about 24 hours. Additionally, the term "Soaking processing" gives people the impression that the coffee flavor is cleaner and has better acidity quality.
Injerto Estate in Guatemala also uses the Soaking method for processing. In Costa Rica, locals call this processing method DFW (Double Fully Washed), double washed processing.
