FrontStreet Coffee - Introduction to Blue Mountain Coffee Varieties
Tipica was the first coffee variety to be commercially cultivated, a genetic mutation of Arabica, born from the Dutch dedication to coffee. At a time when Europe still had some resistance to coffee, the Dutch were already thinking about cultivating coffee to launch global trade. However, the Dutch didn't initially understand that coffee is a tropical crop that cannot tolerate cold. It wasn't until 1616 that the Dutch East India Company successfully cultivated coffee trees in greenhouses, transplanting them successfully and creating what became known as the "mother coffee tree."
Blue Mountain
Blue Mountain Coffee is quite popular among the general public. Produced in Jamaica, Central America, in the West Indies, it possesses mellow and smooth characteristics with a slight sweetness in its bitterness. It has a mildly acidic quality that makes the taste buds more sensitive, allowing one to appreciate its unique flavor. It is truly considered the finest of coffees.
Jamaica is an extremely small coffee-producing country, with its coffee production accounting for only 0.02% of the world market share. 85% of its coffee exports are sold to Japan.
Among these factors, the Jamaican Coffee Industry Board (CIB) plays a leading and driving role. Established in 1948, its initial mission was to promote the development of Jamaica's coffee industry, increase coffee farmers' income, protect the quality of Jamaican coffee, and market Jamaican coffee globally.
To ensure the quality of Blue Mountain Coffee, the CIB has established a series of standards:
1. Clearly defined production areas;
2. Selection of Arabica Tipica varieties for cultivation;
3. Training coffee farmers (in cultivation techniques, harvesting and processing methods, environmental protection, etc.);
4. Improving coffee processing skills (insisting on manual picking of only fully ripe red cherries; using the washed processing method; controlling drying conditions to achieve a target moisture content of 12% in coffee beans).
Knowledge Point: Arabica is one of the two very important varieties in the commercial coffee industry, with the other important variety being Robusta.
