Bean Resting
Freshly roasted coffee beans release carbon dioxide, creating pressure inside the packaging that exceeds atmospheric pressure. This pressure helps aromatic compounds and oils integrate, allowing all aromatic substances within the coffee beans to reach an easily extractable state.
The common one-way degassing valve found on coffee bean bags serves to release excess carbon dioxide, preventing the bag from bursting due to gas pressure. However, when coffee beans stop releasing carbon dioxide, the CO2 in the bag will escape through the degassing valve, creating a pressureless storage environment that can diminish what might have been excellent aroma and flavor, accelerating the deterioration of the coffee beans.
The darker the roast level, the more vigorous the degassing process, and the faster the carbon dioxide is released. Therefore, generally speaking, the darker the roast, the sooner you should seal the degassing valve.
Resting Time
The roast level is also related to the required resting time. The darker the roast, the more pronounced the degassing effect, and the faster it completes to reach the maturation period.
The lighter the roast, the less obvious the degassing effect, and the longer the time required for maturation.
Bean Blooming
Blooming allows the remaining CO2 in coffee beans to escape and uses oxidation principles to make the flavor more rounded and smooth. For dark-roasted beans, to remove uncomfortable bitterness and astringency, the blooming time can be extended. If light-roasted beans have already had sufficient resting time and their flavor development is complete, excessive blooming time may cause the coffee beans to lose their aroma and result in a flat taste. Therefore, blooming time is inversely proportional to resting time.
Single-Origin Coffee Beans
We typically use pour-over methods to extract coffee, so regardless of the roast level, we can use the duration of the bloom to assist with bean awakening, eliminating the need for special blooming time.
