Many friends who are new to freshly roasted coffee beans often find themselves confused. Why do sellers sometimes tell you to finish the beans within two months, while other times they suggest waiting 4-5 days before drinking? Keeping track of so many dates can feel like studying history.
One of the main purposes of resting beans is to allow them to degas: freshly roasted coffee beans still contain gases produced during roasting, such as carbon dioxide. If you drink them immediately, you'll notice some smoky flavors. Only when the smoke and miscellaneous flavors dissipate will the good flavors gradually emerge.
Additionally, even after cooling, chemical reactions continue slowly within the roasted beans, developing subtle flavor changes.
The length of the resting period is primarily determined by the roast level - the lighter the roast, the shorter the resting period needed, sometimes just one day. Conversely, the darker the roast, the longer the resting period required.
Essentially, no roaster will precisely tell you the exact resting period for a specific bean. This is because it's extremely difficult - each bean variety requires a different optimal resting period due to slight variations in factors such as variety, moisture content, and roast level.
Moreover, each consumer has different taste preferences and brewing methods. You might find that the coffee tastes best on the fifth day, while someone else prefers to brew and drink it on the second day.
Coffee beans used for espresso are somewhat special. On one hand, espresso machines primarily rely on pressure extraction, and residual gases in the beans can affect extraction efficiency. On the other hand, because it's concentrated, flavor differences are amplified. Therefore, beans generally need to "rest" until gases are completely expelled, which takes one to two weeks.
