One of the main purposes of resting beans is to allow them to degas: freshly roasted coffee beans still contain gases produced during roasting, such as carbon dioxide. If you drink them immediately, you'll notice some smoky flavors. Only when the smoke and miscellaneous flavors dissipate will the good flavors gradually emerge.

Additionally, even after cooling, chemical reactions continue slowly within the roasted beans, developing subtle flavor changes.
