FrontStreet Coffee - Yirga Cheffe Region Introduction
Yirga is located in the Sidamo province of Ethiopia, in a highland area at an altitude of 2,000 meters. It is one of the highest altitude coffee producing regions in Ethiopia. The coffee produced here is called Yirga Cheffe. "Yirga" means to settle down, and "cheffe" means "wetland," so its original meaning is "let us settle and make a living in this wetland." This small town is located on the eastern side of the East African Rift Valley.
Representative of Floral and Fruity Coffee
Yirga Cheffe coffee is one of the most distinctive coffees in the world, an outstanding representative of African washed coffee, and has always enjoyed a high reputation among global coffee connoisseurs. Washed high-quality Arabica coffee is suitable for various degrees of roasting, perfectly presenting fresh and bright floral and fruity aromas, with very beautiful and complete bean shapes. In Ethiopia, both washed and natural processing methods are very common.
In the natural processing method, farmers place coffee cherries on drying beds and then dry them in the sun for 14-42 days. Once the coffee beans are dry, they are removed from the coffee cherries.
Ethiopian washed coffee beans emit an elegant aroma. Overall, it has subtle floral and citrus flavors, clean as silk, but the specific flavor characteristics vary by region.
Natural processed coffees often have richer, fuller fruit flavors. Compared to washed coffees, properly processed natural coffees maintain clean lemon aromas and floral notes while adding sweetness and body.
In 2007, Trabocca, a Dutch trading company, initiated the Red Cherry Project. Regardless of whether using washed, semi-washed, natural, or semi-natural processing methods, the pure intention was to motivate coffee farmers to produce the best quality coffee.
And to ensure that these farmers' efforts receive feedback and rewards. Before the production season, Trabocca invites selected farmers or producers to participate in this project to produce micro-lot coffees (approximately 1500-3000 kg).
They hand-pick 100% ripe red coffee cherries in batches (hence the name Red Cherry Project).
Trabocca provides financial loan support, new hardware equipment, and production processing knowledge and technology to assist farmers. They promise to purchase at excellent prices as long as the actual output quality meets cupping standards in cupping rooms in Addis Ababa, Ethiopia and Amsterdam, Netherlands. The passing standard set by Trabocca is 88 points.
The coffee beans from the Red Cherry Project are immediately packaged in plastic inner bags (GrainPro bags or vacuum-sealed bags) after processing at the origin, then shipped to Djibouti to await sea freight. Through real-time monitoring, safe transportation, and timely appropriate processing methods, they strive to pursue perfect quality.
Roasters can also purchase high-quality coffee beans because of this Red Cherry Project, which also improves Ethiopia's coffee quality and fetches better prices. Trabocca can return profits to farmers, enabling continuous improvement and sustained quality enhancement. It has tropical fruit, red apple aroma, passion fruit, mixed fruit candy, balanced sweet and sour, with a cocoa aftertaste.
Knowledge point: The source of coffee's aroma and flavor is highly volatile. Therefore, the longer coffee beans are stored, the more aroma and flavor are lost.
