Natural processed Yirgacheffe offers intense, bold flavors with full body, where the sweet-tart contrast of fresh fruit is more pronounced. No wonder people say that only those who have tasted the highest grade natural processed Yirgacheffe will believe that coffee is a fruit.
The mountain villages of the Yirgacheffe region are shrouded in mist year-round, with gentle breezes, cool but not hot temperatures, and rainy but not humid conditions. The original Yirgacheffe coffee trees were planted by European monks on the mountains, while today they are mostly grown in farmers' backyards or intercropped with other agricultural crops. Each household's yield is small, making it typical pastoral coffee. Yirgacheffe is mostly processed using the washed method to preserve its fresh, clean taste, but a small amount of specialty beans is intentionally naturally processed to enhance the charming fruit aromas and body.
Yirgacheffe can be divided into two processing methods: natural and washed, each bringing different taste profiles.
Washed Yirgacheffe
When grinding: lemon, jasmine floral notes, citrus, grapefruit, and honey-like sweet aromas.
When brewed through pour-over: lemon and orange fruit acidity, with delicate acidity and refreshing taste; grapefruit and red apple flavors, with a long, lingering aftertaste.
Natural Process Yirgacheffe
When grinding: rich wine aroma with hints of apricot blossoms and nutty notes.
When brewed through pour-over: peach sweetness, honey-like aroma with mature tropical fruit notes, and subtle spice flavors.
Many coffee lovers who adore Yirgacheffe describe it as "coffee entering the mouth, like a hundred flowers blooming." I prefer to describe it as clean and refined, yet rich and captivating.
