The Republic of El Salvador is a coastal country located in the northern part of Central America and the most densely populated country in the region. El Salvador's domestic economy is primarily agricultural, with main products being coffee beans and cotton. Due to years of war, it is one of the world's "low-middle income countries," with slow domestic economic development. However, El Salvador and Guatemala are both the birthplaces of Mayan culture in Central and South America.
El Salvador is geographically located between Honduras and Guatemala, with the Pacific Ocean to the south. The terrain of El Salvador is mainly mountainous and highland, with many active volcanoes, which is why it is also known as the "Land of Volcanoes." El Salvador has a tropical climate throughout, with an average annual temperature of 28 degrees Celsius; November to April is the dry season, May to October is the rainy season, with mountain precipitation exceeding 1800 millimeters and coastal areas around 1000 millimeters.
Pacamara was artificially cultivated as a hybrid variety in El Salvador in 1958, inheriting the flavor of Pacas and the bean size of Maragogipe. In 2005, Pacamara won the top prize in the country's COE competition, gaining international fame. Its parent varieties are Pacas and Maragogipe.
Coffee cultivation in El Salvador began in the late nineteenth century. Although it started late, during its golden age, it was once the world's fourth-largest coffee-producing country. However, during the civil war from 1980 to 1992, El Salvador's coffee cultivation industry almost stagnated. But because of this, El Salvador has preserved many relatively traditional coffee cultivation and management methods—shade trees + manual harvesting + ancient coffee varieties. El Salvador's specialty coffee is concentrated in the Santa Ana volcanic region in the west and the Chalatenango volcanic region in the northwest. Its flavor inherits the mild quality of Central American coffee, with overall characteristics of being smooth, slightly acidic, and having a pleasant sweetness.
The Pacamara variety is an artificially cultivated variety of Pacas and Maragogipe. It was first cultivated by Salvadoran researchers in 1958.
Pacamara is a rare excellent variety developed through artificial selection, surpassing its parents and perfectly inheriting the advantages of both parent plants. It has both the excellent flavor of Pacas and the large bean size of Maragogipe. Pacamara beans have an average length of 1.03 centimeters (average beans are about 0.8-0.85 cm) and an average width of 0.71 centimeters (average beans are about 0.6-0.65 cm), with over 90% being 18 mesh or larger, featuring full and round bean shapes.
The most distinctive feature of Pacamara is its lively and intricate acidity, sometimes with biscuit aroma, sometimes with fruity flavors, excellent body and oiliness, with the best quality produced in El Salvador and Guatemala.
