Bourbon Coffee - Bourbon Variety

Before introducing Pink Bourbon, let's briefly explain what Bourbon coffee is. Bourbon coffee was originally cultivated on Réunion Island, which was also called Bourbon Island before 1789. The Bourbon variety, along with Typica, belongs to the oldest existing coffee varieties. When the green cherries mature, they turn bright red.

Bourbon Coffee - Pink Bourbon

Pink Bourbon, as the name suggests, has romantic pink coffee cherries when mature. It is an extremely rare new variety, cultivated by hybridizing Red Bourbon and Yellow Bourbon. The reason why Pink Bourbon is considered a rare variety is mainly because maintaining this beautiful pink color is very difficult. Sometimes orange Bourbons are harvested because the color of coffee cherries is ultimately determined by the recessive genes within the pollen grains. Among the selected pollen grains for hybridization, there are both yellow genes tending toward Yellow Bourbon and red genes tending toward Red Bourbon, all of which are recessive genes that can easily interfere with each other.

Currently, Pink Bourbon can be found in Colombia and Guatemala. Taking this batch of Pink Bourbon coffee as an example, with approximately 1,800 coffee trees, each tree produces about 1.8kg of fresh cherries per harvest season. After pulping, approximately 0.36kg of coffee beans are obtained. In a normal harvest season, the total yield of this coffee is less than 650kg.

Colombian Pink Bourbon was first discovered by coffee farmer Rodrigo Sanchez in the Colombian Vereda growing region. As the name suggests, Pink Bourbon cherries turn pink when mature, and it is a hybrid variety of Red Bourbon and Yellow Bourbon. Pink Bourbon is an extremely rare bean variety, far scarcer than Pacamara and Geisha.

Among the genes that affect coffee cherry color, red and yellow are dominant genes, while pink and orange are recessive genes. Therefore, the quantity of Pink Bourbon is extremely rare, and even when it appears, it is difficult to maintain stability. Additionally, Pink Bourbon faces challenges in determining ripeness during harvest.

Pink Bourbon is not only rare but also has excellent flavor. After light roasting, this Pink Bourbon from Santa Adolfo, Vereda, Colombia, shows wonderful fruit flavors: green grape juice, berries, floral notes, sweetness, and smoothness.

Pink Bourbon is a hybrid of Red Bourbon and Yellow Bourbon. The success rate of hybridization is relatively low, making Pink Bourbon quite rare. It has strong disease resistance.
