When mentioning Yunnan, most people's minds conjure images of tourist destinations like Dali, Lijiang, Kunming, and Xishuangbanna. Of course, local specialties such as fresh flowers, flower cakes, and Pu'er tea also leave lasting impressions. However, Yunnan has another major specialty—Yunnan small-seed coffee (also one of Yunnan's calling cards), which accounts for approximately 95% of China's coffee production and has been cultivated for over a century.

Yunnan small-seed coffee offers a relatively neutral flavor profile—neither too acidic nor too bitter. It embodies the characteristics of being fragrant without bitterness, rich without harshness, and pleasantly slightly acidic, making it well-suited to popular tastes. If you prefer fruity acidity, you should specifically select Yunnan small-seed coffee beans grown at high altitudes with a lighter roast degree, as these beans exhibit higher acidity and milder bitterness. If you simply dislike acidity, then choose dark-roasted beans, though the bitterness will be somewhat stronger.

Yunnan's small-seed coffee primarily consists of Typica, an original Arabica variety. Due to Typica's poor disease resistance and susceptibility to leaf rust, constant monitoring of its growth and careful attention to every leaf is necessary. Because of Typica's low yield, another variety was introduced to Yunnan's small-seed coffee: Catimor.

Catimor is a hybrid of Arabica and Robusta varieties. Robusta offers excellent leaf rust resistance, rich oils, high yield, and ease of cultivation. After being crossbred with Arabica's Typica, Catimor acquired 25% Robusta genetics, enhancing its leaf rust resistance while preserving rich oils and partially retaining the complex flavors of the original Typica variety. Consequently, most Yunnan estates began large-scale cultivation of Catimor, while Typica's cultivation area gradually diminished. However, I must emphasize that Catimor still falls short of Typica in terms of flavor profile.
