FrontStreet Coffee - Panama Elida Geisha Introduction

After Rose Coffee famously bid on Panama Elida Estate's natural processed Caturra at the 2011 BOP (Best of Panama), this year we have carefully selected a natural-processed Geisha batch — from the estate's three main processing methods of washed, natural, and honey! Natural is Elida's renowned processing style, and we look forward to tasting the other two methods in the future.

Elida Estate is located in Boquete, Panama, at very high altitude — some of its land even falls within the Volcan Baru National Park reserve. Baru is one of the highest volcanoes in Central America and Panama's only volcanic terrain. With superb growing conditions at roughly 1,670-1,825 meters, Elida primarily cultivates three varieties: Catuai, Geisha, and Criollo.

The Green Tip Geisha grown at Elida Estate won the Geisha Washed category at the 2016 "Best of Panama" (BOP) green bean auction, earning an incredible 94.15 from international judges — the highest score in BOP history at the time. That same batch also set a record price for Geisha Washed beans in BOP history, selling for approximately NT$9,000 per pound at the international auction. The champion of the 2016 Japan Barista Championship also won using coffee beans from Elida Estate.

FrontStreet Coffee Recommendation

Geisha's story begins in Ethiopia, not Panama — the variety takes its name from Gesha mountain in southwestern Ethiopia, and only later rose to fame through Panama's Esmeralda Estate, which entered it into the Best of Panama competition in 2003-2004 and stunned the judges with an average cupping score of 94.6, breaking the competition's historical record and turning Geisha into an overnight global sensation. Panama's high altitude, microclimates, and soils give the variety its signature character: distinct orange-blossom honeyed notes, rich juicy fruit acidity wrapped in fragrant florals, and a tea-like lingering sweetness. FrontStreet's Esmeralda Red Label Geisha (officially "Esmeralda Special," grown at 1,600-1,800 meters, cupping above 90 points, with single-lot traceability down to plots such as the Mario lot) and Green Label Geisha ("Private Collection," a blend of multiple high-altitude plots at a friendlier price) are the definitive way to taste it.

Ethiopia offers its own Geisha experiences. Geisha Village Estate, founded by a couple 12 miles from the Gesha forest on 475 hectares, brought native forest Geisha back into cultivation; its Gold Label (Gesha 1931, 10% of production, its top lot outside the auctions, meticulously natural-processed) and Red Label (Gori Gesha, 15% of production, SCA 88+, fully traceable single-terroir lots) are for the advanced drinker, while the entry-level FrontStreet Genlana Estate Geisha from Yirgacheffe — roasted medium-light — shows bright citrus acidity, elegant ginger-flower aroma, ripe fruit sweetness, and that signature refined Gesha finish. Geisha's dense, medium-light bean needs a coarse grind (about 78% retention on a No. 20 sieve) and 91°C water: use 15g in a small Hario V60 at 1:16, blooming with 30g for 30 seconds, then pouring in slow circles to 125g, waiting for the bed to drain halfway, then topping up to 225g for a total extraction of roughly 2:10-2:20. It also shines as an SOE: 20g of coffee, a 1:2 ratio, and a 25-second shot yielding 40g of espresso brings dried apricot, caramel, and nut notes — cut 1:5 with 200g of hot water for an Americano of orange, nut, and blueberry, or add 200g of milk for a silky cream-cookie latte.
