FrontStreet Coffee - Panama Coffee Varieties, Flavors, and Processing Methods
Although geographically neighboring countries like Costa Rica and Colombia, Panama's coffee boasts uniquely distinctive, balanced, and rich aromas, with a light yet sweet and gentle acidity, and moderate body—making it a high-quality specialty coffee producing region! Among these, Geisha coffee has garnered worldwide attention. In terms of flavor, experts describe it as having intense citrus aromas, jasmine floral notes, almond and mango, nectar-like sweetness, and bright, complex fruit acidity!
The Geisha variety primarily originates from the Kaffa forest, known as the treasure trove of coffee genetics, specifically from Geisha Mountain in southwestern Ethiopia, near the Sudan border, at altitudes ranging from 1,700 to 2,100 meters. However, puzzlingly, why didn't Ethiopia keep such high-quality coffee for itself instead of handing it over to Panama?
In fact, Ethiopia's official archives contain descriptions of Geisha from that time. At that point, Geisha was discovered to have extremely strong disease resistance and could be used to "hybridize" with other coffee trees to enhance their disease resistance. However, its flavor wasn't extensively described, and its yield was poor, so it disappeared from attention for a long time until recently being rediscovered by the world. This has led some to speculate whether the changes in Geisha's flavor are due to Panama's terroir causing a significant enhancement in its characteristics? However, this remains to be confirmed.
Panama's specialty coffee producing areas are concentrated in the Chiriquí province on the western side of the country. The Boquete region, located within Chiriquí province, is Panama's oldest and most famous coffee producing area, with both Jaramillo and Hacienda La Esmeralda estates situated here. This location not only has fertile volcanic soil but is also shrouded in mist, keeping temperatures moderate with abundant annual rainfall—creating the perfect growing environment for Arabica coffee trees. No wonder the coffee quality is so exceptional!
Besides Geisha, Panama's coffee varieties are extremely diverse, including ancient Typica and Bourbon, as well as newer varieties like Caturra and Catuai. Among these, Typica varieties have distinct acidity with delicate aromas. Most are processed using the washed method.
