The Wet Hulling Process
After removing the coffee cherry pulp, the parchment beans are placed in water containers, where defective beans floating on the surface are removed. The dense parchment beans that sink to the bottom are briefly cleaned and placed in barrels or plastic bags for slight dry fermentation. They are then sun-dried for one to two days until the moisture content reaches 30%-50%, when the beans remain semi-hard and semi-soft. The hulling machine removes the parchment shell, accelerating the drying process. After approximately two more days, when the moisture content reaches 12%-13%, the process is completed, taking about four days in total.
