Indonesian Coffee Regions
The best growing areas in the entire Indonesian archipelago are Java Island, Sumatra, and Sulawesi. These three islands have established three major coffee brands: Mandheling coffee, produced in Sumatra, Indonesia, with moderate acidity and an extremely rich aroma; Java coffee, produced in Indonesia's Java Island, belonging to the Arabica coffee species; and Sulawesi Island coffee, with full-bodied beans and rich aroma. Robusta coffee accounts for 90% of total production and is reputed to be the world's highest quality.
Java Coffee
Java produces refined aromatic coffee with relatively low acidity, delicate texture, and good balance. The aroma and acidity of Java coffee are superior to those from Sumatra and Sulawesi islands. The best plantations in Java include Blawan, Jambit, Kayumas, and Pankur. Java Mocha coffee is a blend of Java coffee and Yemen Mocha coffee.
Sumatra Coffee
Sumatra, the second largest island of the Indonesian archipelago, is Indonesia's petroleum industry center, and the island's rubber and timber are also famous export commodities. However, Sumatra's coffee is even more remarkable. This coffee is similar to Java coffee, only with slightly heavier beans. Coffee beans from Mandheling and Ankola are also highly valued, with the former even praised as the world's most full-bodied coffee beans.

Aged Mandheling
Aged coffee beans do not refer to coffee beans that have been stored for a long time, as this is not acceptable because coffee beans stored for too long will still spoil, turning from fresh green to white, then to yellow, becoming tasteless, and even growing insects. Like aged wines, green beans must undergo proper processing and long-term storage before they can be called true Aged Coffee.
Understanding Aged Coffee Beans
So-called Aged coffee beans (Aged bean) mean: Green beans are allowed to age naturally through extended storage time (usually 2-3 years), with changes including reduced acidity, color change, and thickened bean texture. The storage environment must be cool and ventilated. Due to the relatively dark storage environment and longer time, aged coffee always has complex flavors similar to mustiness or commonly known as burlap bags or leather.

Due to the processing method, the green beans have a rather special color - orange with black undertones. The surface appears wrinkled, and the green beans are relatively uniform in size.
