FrontStreet Coffee - Geisha Variety and Brewing Guide

Arabica, also known as small-grained coffee beans, originated in Ethiopia. Arabica coffee trees mostly grow at altitudes between 1,000-2,000 meters; they are relatively cold-resistant, with suitable growth temperatures of 15-24°C; they require high humidity, with annual rainfall of no less than 1,500 milliliters, and also have higher requirements for cultivation techniques. Arabica coffee trees belong to the larger shrub category, with oval-shaped, dark green leaves. The fruits are also oval-shaped, generally containing two slightly flattened beans. The front of the bean is long oval-shaped, with a narrow and curved crack in the middle, forming an S-shape. The back of the bean has a relatively flat arc shape. The caffeine content is approximately 0.8%-1.5%.

Arabica coffee began to spread worldwide in the mid-1700s. Historically, most coffees are descendants of Typica and Bourbon. In the mid-20th century, breeders began introducing "introgression" varieties resistant to "coffee leaf rust."

Arabica has a very famous derivative variety called Geisha. This extremely popular coffee variety can be easily identified by the angle of its top branches and the shape of the plant. The top branches of the Geisha variety extend toward the sky at 45-50 degrees. Geisha plants are tall, with long distances between branches, and both the trunk and branches are thin, somewhat similar to Typica.

The leaves are smooth and slender, and the coffee cherries are also elongated like Typica. The most obvious difference between Geisha and Typica is that Geisha has an umbrella-shaped or flat top, while Typica is conical. The taste of ripe Geisha cherries is completely different from other varieties—they have citrus flavors and sweetness, as well as a jasmine-like aroma.

Clever Coffee Dripper

The principle of the Clever Coffee Dripper is similar to that of a French press, and it looks quite like a pour-over drip cup. What's special is that there's a special piston at the bottom that allows you to easily control the entire coffee extraction process. When you release the piston below, the coffee liquid drips into the cup.

Its main production area is in Taiwan, where it's known as the "Light of Taiwan" in the coffee utensil world. Its principle is between pour-over and French press, but it's simpler and easier to use than both! Unlike pour-over pots, it doesn't have high requirements for water flow and time, making it suitable for beginners to use, but the taste is by no means inferior to pour-over. Using the same immersion principle as a French press, it adopts a filter paper filtration method during use, which can produce purer coffee.

Brewing Steps

1. According to the water-to-coffee ratio of 1:15, grind the coffee beans to a medium-fine grind
2. Fold the filter paper and place it in the cup, then wet it
3. Pour in the coffee powder and spread it evenly
4. Pour 93°C hot water for a 30-second bloom with 225g of water, then brew the coffee by drawing circles from the center outward
5. Stir thoroughly with a spoon, cover with the lid, and steep for 2-3 minutes
6. Move the Clever Coffee Dripper to a cup and wait for the coffee to filter through

Since the predecessor of the Clever Coffee Dripper was a tea brewer, it was not originally used for brewing coffee. But unexpectedly, when applied to coffee, the flavor performance is excellent, and it greatly reduces the difficulty of brewing coffee. It's a foolproof brewing method that maintains good quality.

Important Notes

Water Temperature (Flavor):

The water temperature should be around 88-92°C. The higher the temperature, the more bitter the coffee flavor; conversely, it will be more acidic.

Steeping Time (Concentration):

Steeping time should be at least 1.5 minutes and can be as long as 3-4 minutes. The length of time will affect the strength of the coffee, which can be adjusted according to personal preference.

Stirring (Flavor + Concentration):

When using the Clever Coffee Dripper, the number of stirs should not be excessive. You need to stir back and forth along with the water flow movement, with the principle of not piercing the filter paper, to ensure even mixing. Stirring 3-6 times is most appropriate.

Knowledge Expansion
