Yirgacheffe is a renowned origin with numerous legendary stories and has been a popular single-origin coffee in the specialty coffee market for the past decade. Yirgacheffe is Ethiopia's highest-altitude coffee growing region, serving as a local transportation hub and coffee distribution center. It possesses advanced and well-developed coffee processing equipment and skilled labor, resulting in exceptionally high coffee quality.
What is Washed Processing?
The washed method is one of the processing methods for green coffee beans. After harvesting, coffee beans must immediately enter processing; otherwise, they will begin to ferment, causing off-flavors in the beans. There are two main processing methods: "natural method" and "washed method," each resulting in different flavor profiles.
Full Washed Method
This method uses washing and fermentation to remove the fruit pulp, skin, and mucilage. Farms using the washed method must build washing tanks and have access to continuous flowing water. During processing, the fermented beans are placed in the tank and moved back and forth, using the friction between beans and the power of flowing water to wash the coffee beans until they are smooth and clean.
After washing, the coffee beans are still enclosed in the parchment layer with a moisture content of 50%. They must be dried to reduce the moisture content to 12%; otherwise, they will continue to ferment, become moldy, and spoil. The preferred processing method is sun-drying, which takes 1-3 weeks but produces excellent flavor characteristics that are highly appreciated.

Recommend using 15g of coffee with 91°C water, coffee-to-water ratio of 1:16, BG-6S grind size, V60 dripper, coffee-to-water ratio of 1:15. First pour 30g water, bloom for 28-30 seconds. Second pour to 120g water and pause. Third pour to 230g water, avoiding the final tail portion. Total extraction time around 2:00 minutes.
