This bean is from Colombia San Jose Estate, which uses the refined washed rum barrel fermentation processing method. The coffee processed through refined washed rum barrel fermentation selects Castillo varieties of approximately 17-18 screen size. After removing the coffee cherry pulp, the beans are placed in aged oak barrels for low-temperature fermentation, followed by washing treatment, and finally dried on sun-drying racks.

Ice Pour Over
For ice pour over, we have two methods of adding ice cubes. Let's first look at the brewing parameters for adding 100 grams of ice to the serving pitcher first.
Brewing parameters: 1:15 ratio/90°C/15 grams of coffee/grind size BG-6M (58% passing rate through Chinese standard #20 sieve). After pouring 30 grams of water for a 30-second bloom, add water to 100 grams. After seeing the coffee bed, add another 152 grams of water to finish. Remove the filter cone when the coffee extraction is complete, with a total extraction time of approximately 1 minute and 30 seconds.
Flavor: Rum, dark chocolate, berries, with a relatively persistent wine-like aftertaste.
Coffee storage is not as strict as wine and tea; it only needs to be stored in a light-proof, dry environment, away from heat sources. Of course, never put it in the refrigerator. The small amount of moisture remaining inside the coffee beans can still cause significant damage to the coffee's flavor.

If you won't be drinking the coffee for a long time, you can place it in a dedicated, clean, odor-free refrigerator, completely isolating the coffee from other foods. When you want to drink the coffee, remove it from the refrigerator, but don't open it immediately. Let it sit at room temperature for 1-2 hours until the beans' temperature returns to room temperature, then open the packaging and extract the coffee.
Knowledge Bonus: Actually, for properly roasted coffee, it can maintain excellent flavor for two to three months. The coffee's internal degassing time can last for more than forty days, during which time we don't need to worry too much about changes in the coffee's flavor.
