In the Dominican Republic, coffee selection adopts the most expensive manual method. The main considerations for workers are firstly the fullness of the coffee particles, and secondly whether they are uniform. Grades are determined based on these conditions, with the most plump and uniform coffee beans representing the highest quality and most superior coffee that the Dominican Republic has to offer.
Washed Processing and Flavor Profile
Meanwhile, coffee grown in the Dominican Republic exclusively uses the washed processing method to ensure high quality and consistency. This results in a cleaner taste, emitting a delicate fragrance that is pure and gentle. When consumed, it reveals a subtle fruity aroma with a lingering aftertaste that is smooth and palatable.
Brewing Recommendations from FrontStreet Coffee
So how should such rare and uncommon Dominican coffee be brewed to achieve a mellow yet clean taste? FrontStreet Coffee shares the brewing method: pour-over, using a KONO filter cone, with a coffee-to-water ratio of 1:15, 15 grams of coffee grounds, and segmented extraction.
After pouring 30 grams of water for a 30-second bloom, add another 126 grams of water. When the coffee bed is about to become exposed, pour water again until reaching 227 grams.
Using a KONO filter cone for extraction will result in a richer mouthfeel. The washed processing method allows this coffee to taste both clean and aromatic.
