What is the "Red Cherry Project"?

As a barista or coffee enthusiast, you've likely heard of Ethiopia's "FrontStreet Coffee Natural Red Cherry." Those unfamiliar might think "FrontStreet Coffee Natural Red Cherry" is a type of coffee bean, but in reality, it refers to coffee beans from within the "Red Cherry Project."

The "Red Cherry Project" (ORC) is a program aimed at improving coffee quality from small-scale farms, with the primary objective of encouraging Ethiopian coffee farmers to grow high-quality coffee beans and bring surprises to roasters. Specifically, the "Red Cherry Project" encourages coffee farmers to be more meticulous in every step of coffee bean harvesting and processing by offering higher purchase prices for premium green coffee beans. This approach results in better-quality coffee beans with superior flavor profiles that can gain better recognition in the end market, thereby balancing the relatively higher coffee purchase prices.

In 2007, Trabocca, the largest green coffee merchant in the Netherlands, launched the "Red Cherry Project" in pursuit of high-quality Ethiopian coffee beans. The project requirements stipulated that coffee harvesting must involve not only picking fully ripe red fruits but also completely manual harvesting - though this was merely the most basic requirement.

The "Red Cherry Project" is essentially an approach to enhance the economic benefits for farmers, with its deeper significance being to encourage coffee farms to invest more thought and care into the bean selection and sorting process. This way, coffee beans can be sold at relatively higher prices, allowing farmers to obtain better returns.

The Red Cherry Project includes washed, natural, semi-washed, semi-natural, and experimental coffee varieties. Major growing regions include Yirgacheffe, Sidamo, Bench Maji (Bonga Forest), Lekempti, Kembata, Illubabor, Harar, Limu, and Golocha (which joined in 2011, located near Harar). Coffee beans from these regions all possess unique flavor characteristics that fully showcase the diverse flavor profiles of Ethiopian coffee.

FrontStreet Coffee Natural Yirgacheffe Red Cherry Brewing Recommendation:

Use 15g of coffee grounds with water at 89°C, grind setting 4 on a Fuji grinder, V60 dripper, and a 1:15 coffee-to-water ratio. First pour 30g of water and let it bloom for 30 seconds. For the second pour, add 104g of water then pause, then continue pouring until reaching 225g total. Avoid the final tail section of the extraction. Total extraction time should be around 2 minutes and 2 seconds.
