Typica

Typica: Derived from an Ethiopian native variety, with a flatter shape; weak disease resistance, susceptible to leaf rust; lower yield.

Bourbon

Bourbon: Discovered on Bourbon Island, hence named Bourbon; rounder shape, with thinner beans, yield about 30% higher than Typica; grows better flavor at high altitudes, disease resistance stronger than Typica, requires shade trees; bears fruit one year and rests the next.

Yellow Bourbon

Yellow Bourbon: Originated from a Bourbon variant in São Paulo, Brazil; excellent flavor performance, frequently a winner in Cup of Excellence.

For a long time, Bourbon coffee has been considered a leader among coffee varieties due to its low yield and high quality. In the previous issue, we discussed the Pointed Bourbon from Nicaragua, but currently, there are few well-known Bourbon varieties: Red Bourbon, Yellow Bourbon, Orange Bourbon, Pink Bourbon.

Bourbon is a variety of coffee tree, belonging to a branch of the Arabica species. It is named according to the color of the coffee fruit when ripe, such as red, yellow, orange, and pink Bourbon. Among them, orange Bourbon has lower yield, while pink Bourbon has extremely low yield.

The name Bourbon originates from "Réunion Island." The French made three attempts in 1708, 1715, and 1718 to introduce coffee from Yemen to Bourbon Island (now Réunion Island); however, it was the second and third transplantations that survived and thrived.

In 1841, a French missionary established a church on the French Réunion Island. Later, he left Réunion Island to establish new churches in several African countries including Zanzibar, Bagamoyo, St. Augustine, and Bula, and planted coffee from Réunion Island in each church. Since then, "Bourbon coffee" has also been present on the African continent.

Flavor: Sweet, clean beans; the natural pulped processing method makes its acidity slightly bright yet well-balanced with sweetness, with some even having tropical fruit notes. Especially the overflowing aroma during brewing makes it even more beloved.
