As one of Colombia's several coffee-growing regions, Huila is arguably the country's most renowned producing area. Like many other regions in Colombia, Huila's development was severely affected by civil unrest, which plagued the country from the 1990s to the early 2000s.
In 2010, the Colombian government launched a support program for farmers displaced by the civil unrest. Its central objective was to ensure the return of land to its legitimate owners and to provide these people with resources to restart agricultural production.
In some cases, this also meant that coffee growers obtained resources to transition from commercial-grade coffee production to specialty coffee production, thereby gaining access to considerably higher market prices.
According to the Colombian Coffee Growers Federation (FNC), in 2016, Huila produced 2.6 million bags of 60kg green coffee beans, accounting for 18% of the country's coffee production.
Pink Bourbon Variety
Pink Bourbon is a coffee variety unique to Colombia. It is a hybrid of Red Bourbon and Yellow Bourbon.
Compared to those two varieties, Pink Bourbon demonstrates stronger resistance to leaf rust disease. However, from a genetic perspective, pink is a recessive gene relative to red and yellow, which explains why Pink Bourbon is not commonly found.
Therefore, during the cultivation process of Pink Bourbon, coffee growers need to provide extremely careful attention to avoid issues such as the failure to express the pink coloration during cross-pollination.
Additionally, during harvest, because pink coloration is more difficult to assess than red or yellow, controlling and judging the maturity of coffee berries becomes more challenging.
Flavor Profile
Flavor: The initial taste reveals citrus, berry, and cherry tomato notes. As the temperature changes, caramel sweetness and subtle fermentation aromas emerge. The aftertaste presents floral and nutty cream aromas, with a smooth and clean mouthfeel.
