FrontStreet Coffee - Yirgacheffe Kochere Brewing Experience Sharing

Yirgacheffe is a small town in Ethiopia with an elevation of 1700-2100 meters, making it one of the highest altitude coffee growing regions in the world and synonymous with Ethiopian specialty coffee. Lakes Turkana, Abaya, and Chamo bring abundant moisture to this area. Represented by Misty Valley, the rift valley is perpetually shrouded in mist, with spring-like conditions throughout the year, gentle breezes, cool and humid weather, where thousands of coffee trees thrive and multiply, cultivating the unique terroir of Yirgacheffe where distinctive floral and fruity aromas intertwine in an enigmatic and ever-changing dance.

Initially, Yirgacheffe's coffee trees were cultivated by European monks (somewhat similar to Belgian monks growing barley to brew beer), later managed by farmers or cooperatives. Coffee trees naturally scattered throughout forests, fields, and backyards. During harvest season, Ethiopian coffee trading companies come to town to purchase coffee beans collected by farmers, ultimately auctioning and exporting them under the "Yirgacheffe" brand.

Kochere Growing Region

Kochere is situated on a plateau at an elevation of 1650-1800 meters.

Ethiopia's main harvest season is November and December. Most farmers do not adopt modern farming methods, instead manually tending to coffee trees without using harmful pesticides or herbicides. Therefore, almost all Ethiopian coffee is organically grown by default, regardless of certification. The combination of original growing methods and precise processing has made coffee from this region world-renowned. Farm owner Neko says: "We didn't have time to prepare this time, but we will prepare for RFA organic certification in the next harvest."

Washed processing coffee requires more resources (water) than natural processing, resulting in higher quality washed green coffee beans. Coffee beans are spread evenly on drying racks for proper ventilation, and to avoid over-fermentation, they are regularly turned.

Washed processing provides brighter acidity compared to natural processing, giving Yirgacheffe its "clean" taste profile. We prefer washed Yirgacheffe because it's clearer.

Clever Dripper Brewing

Brewing parameters: 15g coffee powder / BG-5R / 1:15 ratio / 90°C

Brewing method: Pour water directly to 225g, wait 3'45" seconds, then filter into the sharing pot. Remove after seeing the coffee bed, total time 4 minutes.

Kochere

Lemon, floral notes, orange, cane sugar - overall clean and refreshing, with honey flavors in the aftertaste and oolong tea finish.
