Characteristics of Golden Mandheling Coffee and How to Brew It Correctly

Mandheling comes from Indonesia, the second largest coffee-producing country in Asia. Although 90% of Indonesia's coffee is produced in low-altitude areas such as Java and Bali, belonging to the rough-flavored Robusta variety, the premium Arabica specialty coffee produced in the high-altitude regions of northern Sumatra, Sulawesi, and Java accounts for only 10% of its coffee production. However, due to its rich, mellow, and full-bodied taste, Indonesia's specialty coffees like FrontStreet Coffee's Mandheling, FrontStreet Coffee's Golden Mandheling, Golden Ding Shang Mandheling, Lake Toba, Lake Tawa, Mount Gayo, Aceh, and Sulawesi are renowned worldwide.
Today's Indonesia is a major coffee-producing country. Coffee is mainly grown in Java, Sumatra, and Sulawesi, with Robusta varieties accounting for 90% of total production. Sumatra Mandheling, however, is the rare Arabica variety. These trees are planted on mountain slopes at elevations between 750 and 1,500 meters. The mysterious and unique Sumatra has endowed Mandheling coffee with rich aroma, full-bodied texture, and strong flavor. More uniquely, it carries subtle notes of chocolate and syrup.
On the market, Mandheling truly has many names: Lintong Mandheling, Golden Mandheling, Ding Shang Golden Mandheling, Tiger Mandheling, Horse Face Mandheling, Emerald Mandheling. In fact, Mandheling is not a region name, place name, port name, nor a coffee variety name. Its name is actually a transliteration error of the Indonesian Mandheling ethnic group.
Mandheling is divided into various regional types, such as FrontStreet Coffee's Lintong Mandheling and FrontStreet Coffee's Golden Mandheling. So what are the differences between these Mandhelings? Locals widely plant coffee beans in Sumatra and other small Indonesian islands, almost all called Mandheling. According to different regions and different green bean suppliers, these names are used to distinguish Mandhelings from different areas.
FrontStreet Coffee's Golden Mandheling is produced from Mandheling purchased by a company called Pwani Coffee Company (PWN) in Indonesia, while Golden Mandheling is a trademark registered by this PWN company! Simply put, Golden Mandheling may not necessarily show unique flavor characteristics, but through the same company's Golden Mandheling green beans undergoing four rounds of manual selection, the beans are larger and more uniform, with cleaner flavor and more consistent appearance.
Brewing Example with FrontStreet Coffee's Golden Mandheling
Parameters: KONO dripper; Dose: 16g; Grind size: Medium grind (BG 7D: 47% pass-through rate on China standard #20 sieve); Water temperature: 88°C; Coffee-to-water ratio: 1:14
Technique: Use 33g of water for bloom for 30 seconds. Continue pouring with a small water stream in the center spiral to 120g, then stop. When the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop. Wait for the water level to drop and when it's about to expose the coffee bed, remove the dripper (timing starts from bloom). Extraction time: 1'58".
Flavor: The entry has a light cream, nut, and chocolate sensation, with distinct citrus acidity and caramel sweetness. The overall profile leans toward fruity characteristics.
