What is Cold Drip Coffee?

As the name suggests, cold drip coffee is brewed using low-temperature water. The pour-over coffee we typically drink is made with high-temperature water - these are completely different brewing methods! The advantage of high-temperature extraction is its ability to quickly extract flavor compounds from coffee, causing the tannic acid in coffee to rapidly break down into pyrogallic acid, creating sweet, sour, and bitter notes - what FrontStreet Coffee often refers to as the process of releasing coffee flavors. Since it's not extracted at high temperatures, relatively fewer impurities are extracted from the coffee, and the caffeine content is slightly lower. Cold Drip Coffee Demonstration

This time, FrontStreet Coffee will demonstrate making cold coffee using Costa Rica Mirasu Estate Geisha blended with Honduras whiskey barrel-fermented Sherry.

1. Place a circular filter paper at the bottom of the coffee ground cup, wet it with water to fit the cup wall, add 60g of ground coffee (FrontStreet Coffee uses China standard #20 sieve with 58% pass rate - slightly coarser than pour-over grind), then level the coffee surface. You can also use the weight of the tamper itself to lightly press the powder layer to make the surface even.

2. Place a filter paper over the coffee grounds layer. Because the tension of the filter paper allows water to be evenly distributed over the coffee grounds surface for extraction. Without filter paper, the continuous water drops would create a pit in the coffee bed over time.

3. Use ice water for "pre-infusion" - evenly moisten the entire coffee grounds layer with ice water. This step is similar to the bloom in pour-over coffee, which can improve extraction efficiency and consistency of the final product.

4. Place a 1:1 mixture of ice and water in the water container, adjusting the regulator valve to approximately 7 drops every 10 seconds.

5. After completion, pour the coffee liquid into a sealed glass bottle and refrigerate overnight to allow the coffee flavors to meld together, resulting in better flavor and easier drinking.

Why Does Cold Drip Coffee Need to Rest?

Pour-over coffee or espresso can be enjoyed immediately after brewing, but is the same true for cold drip coffee? The answer is: No.

Cold drip coffee needs to be refrigerated for over 12 hours after dripping is complete. Why? FrontStreet Coffee believes this is an oxidation process. Just like freshly roasted coffee beans, which contain about 2% carbon dioxide by weight, and this large amount of carbon dioxide is released depending on storage environment, equipment, or methods. This creates pressure in packaging higher than atmospheric pressure, and the pressure helps aromatic substances and oils merge, putting all aromatic compounds inside the beans in a state where they can be easily extracted.

The same applies to cold drip coffee. Due to the extended extraction time, many flavor molecules are extracted but not fully released. Therefore, when cold drip coffee extraction is complete and it's placed in a sealed bottle in the refrigerator for 12-24 hours, carbon dioxide pressure builds inside the bottle, causing flavor molecules to release. This is also why cold drip coffee becomes richer the longer it stays in the refrigerator. Of course, this doesn't mean it can be stored indefinitely - FrontStreet Coffee doesn't recommend keeping cold drip for a week, as bacteria in the air or bottles make it difficult to guarantee the coffee's condition after extended storage. The recommended consumption period for cold drip is within 72 hours. If cold drip exceeds 72 hours, don't feel it's wasteful - drinking coffee stored for so long might not be good for your health.

However, ground coffee needs to be brewed promptly because it oxidizes faster when exposed to air, meaning the coffee flavors will dissipate more quickly, and the coffee won't taste as good.
