When brewing coffee, most people use around 15 grams of coffee grounds for each brew. However, sometimes you're not drinking alone! If you're brewing for two or more people, how should you adjust your brewing method? FrontStreet Coffee is here to share what you should pay attention to when brewing coffee for two people.

This [FrontStreet Coffee Ethiopia Gesha Village Chaka] comes from Gesha Village in Ethiopia's Benshangul-Gumuz region. It's a Gesha blend produced by Gesha Village Estate itself, composed of Gorie Gesha, Gesha 1931, and Illubabor varieties. The natural processing method gives this FrontStreet Coffee Gesha Village Chaka a rich flavor profile! FrontStreet Coffee uses light roast to express its aroma and citrus acidity.
FrontStreet Coffee cupping notes: Aromas of floral notes and light fermentation; when sipped, flavors of citrus, berries, cream, oolong tea, and cane sugar.
FrontStreet Coffee Two-Person Brewing Parameters:
Dripper: Key Diamond Dripper; Coffee amount: 25g; Grind size: Medium grind (BG 6M: 48% retention on China standard #20 sieve); Water temperature: 89°C; Coffee-to-water ratio: 1:15; Brewing method: Poured-over extraction in stages.
Use 51g of water for blooming (the blooming water amount should be just enough to wet the entire coffee bed, basically twice the coffee amount). End blooming when you see the coffee bed surface change from wet to dry, blooming time about 30 seconds. Use a small water stream to pour in circles in the center until reaching 145g, then stop pouring. When the water level drops and is about to expose the coffee bed, slightly increase the water flow and continue pouring in circles until reaching 270g, then stop pouring. When the water level drops and is about to expose the coffee bed, use a larger water stream to pour directly into the center until reaching 375g to finish. When the water level drops and is about to expose the coffee bed, remove the dripper. (Timing starts from blooming) Extraction time is 2'26".
Flavor: Wet aroma has light fermentation and tea fragrance. When hot, it tastes of oolong tea, caramel sweetness, and creaminess. When cooled down, it has acidity of citrus, berries, and grapefruit.
FrontStreet Coffee Brewing Parameter Analysis:
1. Dripper! In terms of dripper selection, FrontStreet Coffee chooses the Diamond Dripper with a relatively fast flow rate. The Diamond Dripper has diamond-cut patterns on its sides and a large outlet in the center. The diamond-shaped patterns can make the flow more uniform; the large circular hole design in the center of the dripper can increase flow rate, to some extent compensating for uneven extraction.
2. Coffee amount! When FrontStreet Coffee brews single-serving coffee, we choose 15-16g of coffee grounds with a coffee-to-water ratio of 1:15-1:16. When brewing coffee for two people, FrontStreet Coffee will add 10g of coffee grounds based on the single-serving (15g) amount, meaning we choose 25g of coffee grounds.
3. Grind size! Since the coffee amount increases, the thickness of the coffee bed will also increase. After the coffee bed becomes thicker, the flow rate will naturally slow down. If we brew according to our normal 15g coffee amount grind size, over-extraction will occur. Therefore, we can appropriately adjust it to be coarser.
4. Water temperature! Because the coffee amount increases, extraction time will also increase. Therefore, to avoid over-extraction of coffee grounds, FrontStreet Coffee recommends choosing a lower water temperature for brewing to reduce the extraction rate of the coffee grounds.
5. Technique! FrontStreet Coffee chose a three-stage pouring method after blooming. Using a large water stream to pour directly into the center during the final stage is because, in the later stages of brewing, it's easy to extract some undesirable flavors. Therefore, FrontStreet Coffee chooses to use a large water stream poured directly into the center to reduce over-extraction caused by water flow agitation.
