Flannel Drip Brewing Method

The flannel drip method is a well-known brewing technique that uses flannel (single-sided velvet material) instead of a coffee filter cup. The extraction principle is the same as paper drip brewing, but the filtration speed is faster. When brewing large quantities, it doesn't take too much time, making it suitable for situations requiring larger single-brew volumes. If brewing small quantities, the taste variation can be quite significant due to different pouring methods, making it more challenging for the operator.

The pores in flannel are larger than those in paper filters, making it easier to extract components from coffee. For example, when using paper filters, oils are blocked and have difficulty flowing into the cup, whereas coffee filtered through flannel contains oils. The unique charm of flannel drip brewing compared to paper drip brewing lies in the distinctive oily texture of the resulting coffee.

Filter Maintenance

Maintenance of the flannel filter screen is very important. To remove the paste-like substance from new flannel, it needs to be boiled in water. Additionally, used filter screens should first be rinsed with clean water to remove coffee residue, then stored while wet (either placed in a plastic bag or soaked in water).

Flannel gradually becomes clogged during use, so attention should be paid to the flow rate of coffee liquid during regular brewing. If the flow slows down, adjustments can be made by using coarser coffee grounds or reducing the amount of coffee powder.

History of Jamaica Blue Mountain Coffee

The history of Jamaican coffee dates back to the 18th century. In 1717, French King Louis XV ordered coffee to be planted in Jamaica. In the mid-1720s, Jamaica's Governor Sir Nicholas Lawes imported Arabica seeds from Martinique and began promoting cultivation in the St. Andrew region. Coffee trees were introduced to Jamaica and planted in the Blue Mountains, which were later divided into different grades: high-altitude Jamaica Blue Mountain Coffee, High Mountain Coffee, and Jamaica Coffee, with different grades determining different prices.

Growing Altitude

The Blue Mountains are located in eastern Jamaica. The mountain gets its name because on clear days, when the sun shines directly on the azure Caribbean Sea surrounding it, the peaks reflect the brilliant blue light of the seawater. The highest peak of the Blue Mountains reaches 2,256 meters, making it the highest peak in the Caribbean region and a famous tourist destination. This area lies within the coffee belt, with fertile volcanic soil, fresh air free from pollution, and a humid climate with year-round fog and rain (average rainfall of 1,980 mm and temperature around 27°C). Such climate conditions have created the world-renowned Jamaica Blue Mountain Coffee, as well as the world's highest-priced coffee.

15g coffee grounds, water temperature 86°C, grind size 4, water-to-coffee ratio close to 1:14, total time around 2:00

Brewing Technique

Bloom with 25-30g of water for 25 seconds; first pour to 120g and stop. Use vertical water flow with small, slow circular motions. Second pour to 225g, with slightly faster water flow and circular speed to reduce coffee particles from blocking the filter and causing over-extraction.
