FrontStreet Coffee wants to introduce a natural process coffee, a variety that might be unfamiliar to many people. This farm is located in a new growing region in Guatemala, but the farm has placed in the top three of the COE competition for three consecutive years, which demonstrates the exceptional quality of this coffee. This variety is called Pache, a natural mutation of Typica. Natural processing is rare in Guatemala, and this variety possesses the excellent flavor and mouthfeel characteristics of Typica, with fruit-like sweetness and acidity, the rich body of nuts, and caramel-like sweetness, creating a balanced cup.

Guatemala

Guatemala is located in Central America, blessed with a unique geographical environment, connecting to North America in the north and South America in the south. Facing the Caribbean Sea and the Gulf of Mexico, the climate is relatively humid and tropical, making it an important coffee-producing region worldwide. Guatemala's coffee belt is distributed above 1500 meters, between 14°-16° north latitude, ideal for growing extremely hard beans. Guatemala has seven major producing regions, with Nuevo Oriente being the youngest. This area receives abundant rainfall and belongs to the rainforest region like Cobán, but with slightly less humidity and rainfall. This region was once the poorest area in Guatemala until the 1980s, when the strong demand for specialty coffee led mountain residents to fully embrace coffee cultivation, bringing this area back to vibrant life.

Guatemalan Varieties

Guatemalan varieties are mainly Bourbon, Typica, Catuai, and Caturra. Today, FrontStreet Coffee introduces to you a Typica mutation - Pache. Pache is a natural mutation variety of Typica. The plants are smaller, allowing for denser planting and higher yields. It is suitable for cultivation at altitudes above 1200 meters and in regions with annual rainfall below 2,500 millimeters. This variety was discovered in 1949 at the Brito farm in Santa Cruz Naranjo, Guatemala.

Little Blueberry Farm

Little Blueberry Farm is a Guatemalan COE competition farm that has placed in the top three for three consecutive years (2015: 2nd, 2014: 3rd, 2013: 2nd; 2017: 4th), and is one of the highest altitude and most exceptional farms in all of Guatemala. The farm owner manages the farm professionally, challenging coffee cultivation at 2300 meters, and pushing the limits of Arabica cultivation where higher altitude means better flavor. In recent years, it has demonstrated outstanding strength in various competitions.

Due to the extremely high altitude of this origin, one must pass through two cloud layers to reach it. The cold climate nurtures extremely resilient fruits, cultivating exceptional coffee flavors. The farm owner plants different coffee varieties in different sections of the farm, with slightly different flavors and textures. The Pache cultivated here brings out cocoa notes and a rich body, representing a rare natural process batch from Guatemala. The coffee displays intense black cherry and blueberry flavors, worthy of your appreciation.

FrontStreet Coffee Roasting Recommendations

Machine: Yangjia 800N semi-direct flame roaster

Because this Pache natural process coffee has excellent bean quality with rich fruit flavors even in its green state, FrontStreet Coffee's roaster adopted a light roast to highlight its flavors. Preheat the drum to 170°C before loading, set the damper to 3, and turn on the heat after 30 seconds, adjusting the flame to 140, keeping the damper unchanged. The temperature returns to 103.4°C at 1'32". At 140°C, keep the flame unchanged and open the damper to 4. The beans turn yellow at 5 minutes, the grassy aroma disappears, entering the dehydration phase. Reduce the flame to 120, maintaining damper at 4. At 176°C, adjust the flame to 100, keeping the damper unchanged. Dehydration completes at 8'30", with wrinkles and black spots appearing on the bean surface. The toasted bread aroma transforms into coffee aroma, signaling the prelude to first crack. At this point, pay close attention to the sound of first crack. First crack begins at 9'20", open the damper fully to 5, while reducing the flame to 70. Development time after first crack is 1'30", dropping at 195.4°C.

FrontStreet Coffee's Guatemala Pache brewing method: 30g water for bloom for 30 seconds, pour to 125g in stages, when the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop. When the water level drops and is about to expose the coffee bed, remove the filter cup. (Timing starts from bloom) Extraction time is two minutes.

Flavor Description

When grinding, you can smell rich nutty and spicy aromas with some slight fermented berry notes. When hot, the cup is quite balanced, carrying some fermented fruit aroma and genmaicha tea notes, with nutty and almond flavors. As the temperature cools, there are citrus, berry, and ripe fruit sweetness and acidity, with a persistent sugarcane aftertaste. Overall, it's quite sweet and balanced.
