Key Points: (1) Water Temperature Control, recommended 88°C~90°C. Generally speaking, lower temperature makes coffee more acidic, but

Coffee is renowned for its rich and full-bodied flavor. Body is one of the four characteristics that professional coffee roasters use to evaluate coffee in cupping competitions (the four are flavor, aroma, body, and acidity). The roast level does not always affect body. Body is an independent variable. Colombian coffee is famous for its body. So are coffees from Central and South America. Robusta coffee beans, unlike Arabica coffee, rarely have such a rich body. If you feel like you can chew the coffee, it has body. If it doesn't linger on your palate, it has no aftertaste.

The Challenge of Brewing Premium Coffee

Many friends want to buy premium coffee beans but are afraid of brewing them improperly and ruining good beans, hesitating repeatedly!

Actually, as long as you follow several principles, you can also brew a cup of Geisha coffee full of elegant [fruity floral acidity].

Key Brewing Points:

1. Water Temperature Control

Recommended: 88°C to 90°C. Generally speaking, lower temperatures make coffee more acidic, but if it's an elegant and pleasant fruit acidity, a slightly lower temperature can actually enhance it!

2. Brewing Time

● 1 cup: Recommended 2'00"

● 2 cups: Recommended 2'30"

● 3 cups: Recommended 3'00"

3. Concentration Ratio

Elegant flavors need space to express themselves. Avoid excessive concentration - even a slightly weaker brew will give you more of a floral and fruity tea-like experience.

Recommended ratio: 1:15

● 1 cup: 12g beans, brew 180cc coffee liquid

● 2 cups: 20g beans, brew 300cc coffee liquid

● 3 cups: 30g beans, brew 450cc coffee liquid

4. Grind Setting

Avoid grinding too finely, as this can easily cause over-extraction and increase bitterness. For example, the Little Pegasus grinder suggests a setting of 4.5.

5. Medium Roast Beans

If using medium roast beans, recommend brewing at 90°C for excellent flavor layers. For other brewing time, grind setting, and ratio, you can first follow the light to medium roast proportions, then adjust according to personal preference!

Postscript

Elegant fruity sweetness and acidity, floral notes, tea-like aromas... these are often the characteristics of high-quality specialty beans. To express these delicate and refined flavors, coffee roasting should not be too dark. Generally, it should be set between light to medium-light roast (that is, when coffee roasting enters the first crack, when the cracking sound is approaching its end). With this roasting method, beans need 5 days to mature and reach their optimal flavor peak.

In addition to Geisha, FrontStreet Coffee's other light to medium roast beans can also be brewed this way!
