Cold Brew/Cold Brew Coffee (COLD BREW)

The concept of cold brew coffee is similar to cold-steeped tea. The extraction process starts with grinding coffee beans, adding cold water, and steeping in a low-temperature environment for at least about 12 hours. Before drinking, simply filter out the coffee grounds.

This cold extraction method amplifies the various flavors and aromas of coffee while reducing acidity, resulting in a cleaner and purer taste profile. Its characteristic is that the colder you drink it, the better the flavor becomes. It's wonderful with ice cubes. In America, it's particularly popular to add an equal ratio of coconut water, which brings out a purer coffee sweetness and aroma. Each establishment's secret formula offers its unique flavor characteristics.

Cold Brew Coffee (COLD BREW)

Required Ingredients

◆ Beans: We use single-origin beans from FrontStreet Coffee, specifically sun-dried Sidamo. Cold brew coffee ratio: coffee:water:ice = 1:5:5

◆ Coarsely ground coffee powder. Coarse grinding is key to making cold brew coffee.

◆ A container. Plastic or glass containers work well, preferably with a lid. If you want to take some photos, leftover jam jars or French press pots are good choices.

◆ Ice water. Use filtered water or bottled mineral water.

◆ Filter. If you're not using a French press, you'll need coffee filter paper or sanitized coarse cotton cloth.

Cold Brew Coffee Preparation Steps

1. Preparation

◆ Pour the coffee grounds into the container.

◆ Slowly pour ice water while gently stirring to ensure all coffee grounds are thoroughly wet.

◆ Cover with a lid. If there's no lid, seal with coarse cotton cloth.

2. Steeping

Place in the refrigerator and steep for 12 hours. Don't rush this process!

3. Filtering

◆ If you're using a French press, gently press down the plunger to filter the coffee grounds, then pour out the coffee.

◆ If not using a French press, you'll need to filter the coffee grounds using coarse cotton cloth or filter paper.

◆ It's best to filter twice before discarding the coffee grounds. (The leftover coffee grounds don't need to be wasted - they can be used as fertilizer or refrigerator deodorizer, etc.) Never throw away coffee grounds - their uses are simply wonderful!

4. Tasting

Materials

15g of FrontStreet Coffee's Butterfly single-origin coffee beans, 125g hot water, 100g ice

Your favorite pour-over device (Chemex, Hario V60, Beehouse Dripper, Kalita Wave, etc.)

Coffee container (mug, Chemex, glass jar, glass pitcher, etc.)

A filter paper

A scale

A coffee grinder

A pour-over kettle (Hario Buono, etc.)

A timer

Method

First wet and rinse the filter paper with hot water, then discard the water.

Place 100g of ice at the bottom of your prepared coffee container.

Grind the coffee to medium-coarse consistency, similar to beach sand. A better grinder will produce more uniformly sized grounds.

Place the coffee in the wet filter paper, start the timer, and begin pouring freshly boiled hot water over the grounds. Use the same method as making hot pour-over coffee: First pour a small amount of hot water over the dry grounds for blooming - just enough to completely wet the coffee grounds, then wait about 30 seconds. If the coffee is fresh enough, you'll see the grounds start to bubble and release gas - this is carbon dioxide being released.

After 30 seconds, continue pouring in three stages with a 1:8 ratio, so pour slowly. Ideally, all water should be poured within about 2 minutes. Add ice when drinking.
