Mexico: A Land of Coffee Diversity
Mexico, this exotic place, has deserts, blue waters, mountains, huge cities, and small villages. In recent years, the demand for high-quality coffee has greatly increased buyers' interest in Mexican coffee, which has helped elevate Mexican coffee from its previous status as a blend coffee to single-origin and organic specialty products.
Chiapas: Mexico's Premium Coffee Region
Chiapas is an important premium coffee-producing region in Mexico, with most premium beans grown in high-altitude areas. Many high-altitude beans of organic Mexican coffee are cultivated by indigenous people. These indigenous people have established many cooperatives to obtain assistance from foreign organizations, strive for better prices, promote the advancement of coffee cultivation techniques, and adopt organic cultivation methods to grow coffee.
CESMACH: Sustainable Coffee Cultivation
CESMACH is the Spanish abbreviation for Campesinos Ecológicos de la Sierra Madre de Chiapas (Ecological Farmers of the Chiapas Sierra Madre). The cooperative was established in 1994 in Mexico's ecologically rich El Triunfo region. To avoid damaging the natural ecology, coffee farmers adapt to the local environment using organic cultivation methods, growing coffee under the shade of mist forests. Although this environment limits the coffee cultivation area, the decaying leaves under the shade provide fertilizer nutrients for the coffee trees, and the diverse bird species in the ecological area help control pests on the coffee trees.
The CESMACH cooperative uses community development funds provided by Fair Trade to build warehouses, providing sufficient space and equipment for coffee storage and packaging operations, thereby improving quality and reducing costs.
Women's Empowerment Initiatives
In addition to being environmentally friendly, the CESMACH cooperative is also committed to women's empowerment. Locally, because husbands often need to move to other regions for work, many women must take on the responsibility of caring for the entire family, often facing difficulties such as insufficient income and food shortages.
The CESMACH cooperative is one of the members of the Café Femenino Foundation. Café Femenino has long been concerned with women in coffee-producing regions worldwide, providing diverse income channels, and cultivating female leadership and cooperative management, hoping to change the situation of women being unfairly treated and long neglected, developing their self-confidence and independence.

Brewing Recommendations
FrontStreet Coffee recommends brewing with water around 90°C. It features chocolate and almond flavors, with a mild, delicate, and sweet taste, and elegant aroma. The balance between acidity and bitterness is excellent, with diverse flavor layers at both high and low temperatures after extraction. It's worth trying at various roast levels; the acidity is also outstanding at light roast. When deeply roasted, it also shows excellent flavors, with moderate thickness and smoothness while being refreshing, and the aroma lasts for a long time.
