El Burro Estate is one of the estates under Wilford Lamastus, owner of Elida Estate. Located in the beautiful Boquete region, this area has over half of its cultivation area within the Baru Volcano National Park, allowing it to maintain a relatively pristine ecological environment.
Baru Volcano is one of the highest volcanoes in Central America. Due to differences in altitude, the entire volcanic area has as many as seven microclimate environments. The coffee cultivation area of El Burro Estate is situated at an extremely high altitude of about 1800m, where temperatures are sufficiently low. Additionally, cloud mist lingers during the dry season, and there is primitive forest for shade, with cold nights. Therefore, a coffee tree needs four and a half to five and a half years to begin bearing fruit (two to three years longer than coffee trees planted in general environments), and coffee cherry maturation can be delayed by about a month, allowing for more complete development.
In addition to excellent environmental conditions, Wilford also implements strict quality control for every batch. This batch is a carefully selected African drying bed, 100% natural sun-dried batch with excellent flavor profile.
About Catuai Variety:
Catuai is also an Arabica hybrid variety, a cross between Mundo Novo and Caturra. It inherits the advantage of Caturra's short plant stature, overcoming the disadvantage of Mundo Novo. Another advantage is its firm fruit set, making it less likely to drop in strong winds, addressing the weakness of Arabica fruits that are fragile in wind. However, the overall flavor performance is more monotonous than Caturra, which is its greatest drawback. Catuai also comes in red and yellow fruit varieties. Statistically, red Catuai is more commonly awarded. Catuai, Caturra, Mundo Novo, and Bourbon are considered the four main varieties in Brazil.
FrontStreet Coffee Roasting Suggestions:
Panama SHB coffee beans have high density and are suitable for European fast roasting with high heat. Start with 50% air damper, increase heat at browning point for enhanced aroma, use 80% air damper at first crack, adjust heat based on ROR (Rate of Rise). You can reduce heat during intense first crack to extend development. It's recommended to drop the beans at about 13°C after first crack, aiming for a medium-light roast degree.
Pour-over Brewing Suggestions:
V60 dripper, medium-fine grind, 1:16 coffee-to-water ratio, water temperature 88-90°C
Other Brewing Suggestions:
French Press: Medium grind, 1:15 coffee-to-water ratio, water temperature 87-89°C
Siphon: Medium-fine grind, 1:15 coffee-to-water ratio, water temperature 87-89°C
