The central coffee growing area accounts for 34% of Peru's national total, including Huánuco, Junín, Pasco, and Ucayali regions.
Altitude: 800 – 1,200 meters. Humidity: Minimum 11%, maximum 12.5%. Color: Grayish-green.
Flora: Fungi, tree species, bromeliads, ferns, orchids.
Fauna: Wild turkeys, cock-of-the-rock, parrots, rails, viscachas, wild boars, frogs, snakes, reptiles, geese.
Coffee Characteristics: Moderate and smooth body, balanced acidity, moderate aroma and flavor.
The southern coffee growing area accounts for 23% of Peru's national total, including Apurímac, Ayacucho, Cusco, Madre de Dios, and Puno regions. Altitude: 900 – 2,050 meters.
Humidity: Minimum 11.5%, maximum 12.5%. Color: Grayish-green, bluish-green.
Flora: Orchids, cinchona trees, May orchids.
Fauna: Diverse butterfly species, guans, spectacled bears, toucans, spider monkeys, macaws, parrots, woodpeckers.
Coffee Characteristics: Balanced acidity, excellent body, mild flavor with subtle sweetness.
