What are the flavor characteristics of the washed Bourbon SHB from Las Ranas "Mountain Frog" farm in the Santa Ana region of El Salvador?

El Salvador is the smallest and most densely populated country in Central America. Coffee is the main crop in most regions, but don't overlook its significance due to its small size. In El Salvador, 60% of coffee is of Bourbon varieties, including orange, pink, and red Bourbon. Most Salvadoran farms are medium-sized, with farmers embracing immense passion and professional expertise.

The Las Ranas growers are farmers on a mountain top lagoon, located in the volcanic zone of the Apaneca-Llamatepec mountain range in western El Salvador. The farm has developed certain cultural practices in its development, including pruning coffee and trees, weed control, and updating farm equipment. They use traditional methods for all these tasks, and finding workers in the vicinity is extremely difficult because after the 2005 Santa Ana volcanic eruption, only 2 people remained living near the farm. However, this year has been a bountiful harvest year, with coffee beans slowly absorbing nutrient-rich volcanic soil at high altitudes, complemented by perfect and elegant sea breezes, abundant sunshine, and a cool, dry cloud belt, creating rare flavors.

"Las Ranas" means "mountain frog" in the local indigenous language. Here, there is great respect for the environment, and harvesting and processing follow Rainforest Alliance guidance. This is a product from El Salvador from November 2012 - a batch of washed green beans that will bring you a rich, dazzling, and surprisingly exotic experience.

Grind Size: Fuji Royal grinder setting 3.5

Brewing Method: Water-to-coffee ratio 1:15, 15g coffee grounds. First pour 25g of water for 25s bloom. Second pour to 120g then pause. Wait until the water level in the coffee bed drops to halfway before continuing to pour. Slowly pour until reaching 225g total. Extraction time approximately 2:00.

Analysis: Using a three-stage brewing method to clearly define the front, middle, and back-end flavors of the coffee. Because the V60 has many ribs and drains quickly, pausing during pouring can extend the extraction time.
