After growing palm trees and sugarcane for 80 years, they decided to start growing coffee.
Here there is fertile soil, abundant sunshine, suitable rainfall, significant day-night temperature differences, and gentle sea breezes from the Pacific Ocean.
Most importantly, there is a group of people here who are exceptionally skilled at cultivation.
Even more importantly, they have exceptionally high standards for what they do.
And they only grow rare varieties, using only special processing methods.
This is Colombia's Perfect Estate.
How to Brew Colombia Perfect Estate Arabica Mother Variety
FrontStreet Coffee's pour-over recommendation: Weigh 15g of Perfect Estate Arabica Mother Variety coffee grounds, pour into a grinder for medium grinding. The ground particles should be slightly coarser than table salt. We use BG grinder setting 5R (standard sieve pass rate 60%), water temperature 89°C, V60 dripper for extraction, recommended coffee-to-water ratio around 1:15.
Starting from the center of the dripper, pour hot water in clockwise circles. Begin timing when brewing starts. Within 15 seconds, brew the coffee to 30g, then stop pouring. When the time reaches 1 minute, begin the second pour. Like the first pour, pour in clockwise circles from the center as the focal point. Avoid pouring water on the area where coffee grounds meet the filter paper to prevent channel effects.
When pouring, leave one circle of space at the outer edge of the coffee grounds, then pour circle by circle toward the center. At 2 minutes and 20 seconds, the coffee should reach 220g, completing the brewing process.
Japanese Style Iced Pour-Over Perfect Estate Arabica Mother Variety
FrontStreet Coffee's iced pour-over Perfect Estate Arabica Mother Variety recommendation:
Colombia's Perfect Estate Arabica Mother Variety, light-medium roast, BG grinder setting 5M (standard sieve pass rate 67%).
20g coffee grounds, 150g ice cubes, 150g hot water. Water temperature should be 1°C higher than the normal pour-over recommendation of 90°C. Normal grinding uses Little Fuji setting 3.5, while iced pour-over uses slightly finer—Little Fuji setting 3. Recommended coffee-to-(water+ice) ratio is 1:15.
Bloom with 40g water for 30 seconds.
Segmented pouring: first segment 60g water, second segment 40g water. Use a relatively fine but high water column for forceful stirring impact, ensuring the coffee grounds roll thoroughly. However, be careful not to let the liquid level get too high or pour onto the edge filter paper.
The entire extraction time should be approximately 2.5 minutes (similar to the normal extraction time for 20g of coffee grounds).
