Flavor Characteristics
The microclimate of Colombia's Blue Mountain region is closest to Panama's Boquete region, creating an intense and classic Geisha flavor profile.
Both the dry aroma and the tasting reveal lingering jasmine floral notes, accompanied by citrus, bergamot, lemon peel, peach, strawberry, blueberry, and the sweet taste of honey.
The flavor is magnificent with depth, rich in layers, and has a long, persistent aftertaste.
How to Brew Colombia Coffee 【Cerro Azul Farm Geisha】?
FrontStreet Coffee's pour-over recommendation: Weigh 15g of 【Cerro Azul Farm Geisha】 coffee grounds and grind them to medium coarseness. The ground particles should be slightly coarser than table salt. We use BG grinder setting 5R (standard sieve pass rate 60%), water temperature 89°C, and V60 dripper for extraction. We recommend a coffee-to-water ratio of approximately 1:15.
Pour hot water from the gooseneck kettle in clockwise circles centered on the middle of the filter. Start timing when you begin brewing. Within 15 seconds, brew the coffee to 30g, then stop pouring. When the time reaches 1 minute, begin the second pour. During the second pour, continue pouring in clockwise circles centered on the middle of the filter, avoiding the area where coffee grounds meet the filter paper to prevent channel effects. Leave about a circle of coffee grounds at the outermost edge and then pour in circles toward the center. At 2 minutes and 20 seconds, the coffee should reach 220g, completing the brewing process.
Japanese-style Ice Pour-over 【Cerro Azul Farm Geisha】

Colombia Coffee 【Cerro Azul Farm Geisha】, light-medium roast, BG grinder setting 5M (standard sieve pass rate 67%)
20g coffee grounds, 150g ice cubes, 150g hot water. Water temperature should be 1°C higher than the normal pour-over recommendation of 90°C. For normal grinding, use Fuji grinder setting 3.5, but for ice pour-over, grind slightly finer by half a setting - Fuji setting 3. We recommend a coffee-to-(water+ice) ratio of 1:15.
Bloom with 40g of water for 30 seconds.
Pour in segments: first segment with 60g of water, second segment with 40g of water. Use a relatively fine but high water column to stir and impact forcefully, ensuring the coffee grounds tumble fully. However, be careful not to let the water level get too high and avoid hitting the edge filter paper.
The entire extraction time should be approximately 2.5 minutes (similar to the normal extraction time for 20g of coffee grounds).
