The Coocentral Small Farmer Cooperative is located in the town of Garzón, Huila Province. Since its establishment in 1975, the membership has grown from 55 founding members to over 3,000 today, and continues to expand. Most small farmers produce small batches of coffee averaging 10-15 bags, inviting foreign traders from America, Australia and other regions along with local Colombian cuppers to conduct evaluations together.
The operational model of the Coocentral Small Farmer Cooperative is similar to that of a bank, providing considerable economic support to its participating members. During non-main harvest seasons, the cooperative provides credit loans, allowing farmers to maintain their livelihoods, education, and medical needs during these difficult periods. Foreign buyers trade directly with the cooperative, and the proceeds are collectively distributed back to the producers by the cooperative. Through cupping evaluations, batches of excellent quality receive correspondingly higher compensation, greatly encouraging producers to invest in pursuing quality improvement.
Because the quality of their output has consistently maintained a good level, buyers are willing to purchase these coffees at prices higher than the general market average. This income allows farmers to sustain their livelihoods and repay their loans. Some profits are invested in local community development, production equipment establishment (small farmers have the right to choose how to use construction funds, such as renovating kitchens or building drying platforms on their own properties - the connection between farmers and the cooperative is very close), and required project implementation. In addition to the direct cash returns to producers mentioned above and the cooperative construction fund, Coocentral also allocates a portion of its income specifically to care for women and children, with the remaining portion establishing personal savings account funds for farmers to cope with future possible expenses, education costs, and health insurance.

Brewing Method
Water to coffee ratio 1:15, 15g coffee grounds. First infusion with 25g water, bloom for 25 seconds. Second infusion to 120g, then pause. Wait until the water level in the coffee bed drops to half, then continue pouring slowly until reaching 225g total. Extraction time approximately 2:00.
Analysis
Using a three-stage brewing method to clearly distinguish the flavors in the front, middle, and back sections of the coffee. Because the V60 has many ribs and drains quickly, pausing during pouring can help extend the extraction time.
