Located in East Africa, Kenya is one of the main coffee-producing countries, with about six million people nationwide engaged in the coffee industry, mostly in the form of small farmers and cooperatives. Kamoko has about 1,000 workers and can process about 300 tons of coffee beans annually. These farmers will dry the processed coffee beans on African elevated racks for 2 to 3 weeks, with regular manual turning to ensure the coffee beans are evenly exposed to the sun. In the Kikuyu language, Kamoko means "sweet potato," hence the Chinese name "sweet potato."

Kenya's coffee trees are mostly grown at altitudes between 1,400-2,000 meters, with growing regions including Ruiri, Thika, Kirinyaga, Mt. Kenya West, Nyeri, Kiambu, and Muranga. The main areas are the foothills of Mt. Kenya and Aberdare. In Kenya, many production areas strive to preserve the original forest ecosystem, protect natural gene banks, support the reproduction of wild coffee varieties, and nurture diverse coffee trees.

In 1930, Kenya's unique varieties SL28 and SL34, cultivated and named by the "Scott Laboratories" laboratory, were born in such a favorable environment. According to botanists at the SL laboratory, SL28 and SL34 are genetic variants. Among them, SL28 has a mixed lineage of French missionaries, Mocha, and Yemen Typica. The original goal of cultivating SL28 was to mass-produce coffee beans that are both high-quality and resistant to diseases and pests. Although the yield of SL28 was later not as large as expected, the copper-colored leaves and broad bean-shaped beans have wonderful sweetness, balance, and complex and varied flavors, with prominent citrus and plum characteristics. SL34 is similar in flavor to SL28, but in addition to the complex and varied acidity and wonderful sweet finish, its body is heavier, richer, and cleaner than SL28. SL34 has French missionary, Bourbon, and more Typica lineage. The bean appearance is similar to SL28, but it is more adaptable to sudden heavy rains. It is these two important varieties that lead us to understand the unique Kenyan style: strong and rich fruit acidity, rich body, and beautiful balance.

Brewing method: water-to-coffee ratio 1:15, 15g coffee grounds, first pour 25g water for 25s pre-infusion, second pour to 120g water then stop, wait until the water level in the coffee bed drops to half before pouring again, slowly pour until reaching 225g water, extraction time around 2:00

Analysis: Using a three-stage brewing method to clearly distinguish the flavors in the front, middle, and back stages of the coffee. Because the V60 has many ribs and drains faster, stopping the water flow can extend the extraction time.
