Recently, I've been practicing pour-over coffee and have come into contact with many Ethiopian beans. Among them, one that left a deep impression was a G1 White Cherry Washed Sidamo.

Variety: 100% Arabica
Processing Method: Washed
Roast Level: Medium Roast
Flavor Description: Citrus cream, matcha latte texture, rich floral notes. Tea-like aftertaste.
Ethiopia and Sidamo Region
Ethiopia is Africa's largest Arabica producer. Coffee production ranks among the highest in Africa, with an average annual output of about 330,000 tons. Coffee exports account for 60% of Ethiopia's foreign earnings, and its production accounts for 15% of the world's total.
The Sidamo region is located in southern Ethiopia. Sidamo coffee has lower caffeine content, making it naturally low-caffeine coffee. Sidamo coffee is cultivated at altitudes between 1400m-2000m. The local economy is primarily agricultural, with major coffee growing areas located around the East African Rift Valley. The largest town in Sidamo is Hawassa, which has developed rapidly in recent years with many modern restaurants and hotels established, and is also an important coffee export distribution center. Sidamo coffee flavors are extremely diverse, with different soil types, microclimates, and countless native coffee varieties creating distinct differences and characteristics in the coffee produced by each town.
Sidamo coffee beans are medium-sized and oval in shape, typically processed using both washed and natural methods.
Sidamo offers balanced flavor with high sweetness, and its body is also thicker compared to Yirgacheffe. Especially the acidity and sweetness similar to red wine produced during the natural pulp fermentation process, combined with the original cocoa bitterness of coffee, makes certain batches of Sidamo possess an intoxicating flavor like chocolate liqueur.
Natural processed Sidamo coffee beans are typically exported marked as G4, while washed Sidamo is mostly exported as G2 grade because the processing is more complete than natural processing.
Legends of Sidamo
There are many legends about Sidamo, including the lost treasure of King Solomon, which is said to be buried in the Dewa Valley in the south. The Dewa Valley is densely forested and has had wild coffee forests since ancient times. A unique feature is that farmers select excellent coffee tree varieties from the forest and transplant them to their own farmland. Shakisso is the most famous coffee-producing area in southern Sidamo, where coffee tastes very much like lemon with honey.
How to Brew Sidamo Coffee [White Cherry Washed]
FrontStreet Coffee's pour-over reference: Weigh 15g of [White Cherry Washed] coffee powder, pour into grinder and grind to medium consistency, with particles slightly coarser than salt. We use BG grinder setting 5R (60% standard sieve pass rate), water temperature 90°C, extracted with V60 dripper.
Using the hot water from the pour-over kettle, draw circles clockwise with the center of the filter cup as the focal point. Start timing when brewing begins, reach 30g of coffee in 15 seconds, then stop pouring water. When the time reaches 1 minute, pour water for the second time. For the second pour, like before, draw circles clockwise with the center of the filter cup as the focal point. Avoid pouring water on the area where coffee powder meets the filter paper to prevent channel effects.
When pouring to the outermost circle of coffee powder, leave one circle and then brew back toward the center circle by circle. At 2 minutes 20 seconds, the coffee should reach 220g, completing the brewing process.
Cold Brew [White Cherry Washed]
FrontStreet Coffee's cold brew [White Cherry Washed] reference:
Sidamo coffee [White Cherry Washed], light-medium roast, BG grinder setting 4B, grind level 3, 20g beans, 87°C water temperature with a 3-minute pre-infusion, Chemex pot, then cold brew with ice water, total water volume 200ml.
