Bean Introduction
Origin: Ethiopia
The Sidamo administrative region is located in southern Ethiopia, bordering Kenya. Besides Yirgacheffe, Sidamo, along with Harrar, Limu, and Lekempti, is one of Ethiopia's main specialty coffee producing regions.
Bean Variety: Ethiopia Heirloom
Heirloom refers to Ethiopia's native varieties. Sidamo's grading standards are based on defect rates - fewer defective beans at the same weight standard indicates better quality and higher grade. G1 represents the highest grade of Sidamo.
Processing Method: Washed
Washed Sidamo coffee beans appear light green, are not large in size, and have an oval shape. The beans are full-bodied with good average quality, exhibiting a rich and mellow aroma. The raw coffee beans have a slightly grayish appearance, with some areas coarse and others fine. The acidity is both gentle and intense, the body is well-balanced between rich and light, with sweet and spicy notes, making it one of the garden coffees from Ethiopia's southern highlands.
Roasting: Light Roast
Natural processed Sidamo coffee has floral notes with slight earthy undertones. Washed Sidamo offers nutty fruit aromas with subtle cocoa notes. Both share smooth mouthfeel and viscosity, with pleasant acidity and aroma. Light to medium roast is suitable for single origin, while medium to dark roast works well for blends and as a good base for Espresso.
How to Brew Sidamo Coffee [Oromia Estate West Honey] Well?
FrontStreet Coffee Pour-Over Reference: Weigh 15g of [Oromia Estate West Honey] coffee powder and grind it to medium coarseness. The ground particles should be slightly coarser than table salt. We use BG grinder setting 5R (60% standard sieve pass rate), water temperature 90°C, and V60 dripper for extraction.
Starting from the center of the filter as the focal point, pour hot water from the pour-over kettle in clockwise circles. Start timing when brewing begins. Brew to 30g in 15 seconds, then stop pouring. When the time reaches 1 minute, begin the second pour. During the second pour, continue pouring in clockwise circles from the center of the filter as the focal point. Avoid pouring water where the coffee grounds meet the filter paper to prevent channeling effects.
Leave one circle of space when pouring to the outermost edge of the coffee grounds, then brew circle by circle toward the center. At 2 minutes and 20 seconds, brew to 220g total to complete the pour-over coffee brewing.
