The microclimates of Panama's highlands are the most important resource that makes Panama's unique coffee one-of-a-kind. The Republic of Panama's east-to-west environment allows cold air currents to flow through the central mountain range and converge above 6,500 feet, creating various microclimates in the Boquete and Volcán-Candela regions, making them the main production areas for Panama's unique coffee. These unique coffees are cultivated in the nutrient-rich, balanced soils of the Baru Volcano region.

Cultivation Environment

Panama is a small country located in the center of the American continent. Its beaches are washed by the waters of both the Atlantic and Pacific Oceans. Panama is located at 9 degrees north latitude, at the convergence point of the central mountain range, where one of Central America's highest volcanoes, Baru Volcano, is situated. Baru Volcano has an altitude of over 11,400 feet, and the surrounding land is rich in fertile soil, providing sufficient conditions for the planting and cultivation of Panama's unique coffee. The appropriate microclimates, soil, temperature, and altitude of these highlands are suitable for the sowing, planting, and harvesting of various unique coffees. Finca Dos Jefes

In 2003, when "the bosses" Dee Harris and Richard Lipner acquired Finca Dos Jefes, located near Salto Road on Volcan Baru, this place had been abandoned for 5 years. Their goal was to produce the highest quality specialty coffee and help improve the living standards of the farmers who work with them on the farm. The coffee on the plantation is grown at an altitude of 1,550 meters, combining the waxing and waning of the moon to cultivate coffee trees. The coffee cherry peels and beans we produce on the market are branded as "Cafes De la Luna" (Coffee under the Moon). Our commitment to labor education and learning has achieved good results. In 2017, all permanent workers on our farm were attending university studies. Today, the "Cafes De la Luna" brand represents unique flavors and enjoys a noble ethical position in both local and global coffee circles.

How to Brew Panama Coffee [Finca Dos Jefes Snow Cherry Zinfandel] Well?

FrontStreet Coffee pour-over reference: Weigh 15g of [Finca Dos Jefes Snow Cherry Zinfandel] coffee powder, pour into a grinder for medium grinding. The ground particles should be slightly coarser than table salt. We use BG grinder setting 5R (standard sieve pass rate 60%), water temperature 90°C, extraction with V60 dripper.

The hot water in the pour-over kettle draws circles clockwise with the filter cup as the center. Start timing when brewing begins, brew the coffee to 30g in 15 seconds, then stop pouring water. When the time reaches 1 minute, pour water for the second time. The second pour is the same as before, drawing circles clockwise with the filter cup as the center. The water flow should not hit the connection between the coffee powder and the filter paper to avoid channel effects.

Leave a circle when brewing the coffee powder to the outermost circle, then brew circle by circle toward the center. At 2 minutes and 20 seconds, brew the coffee to 220g, and the coffee brewing is complete.
