The Lempira variety is a branch of Catimor, a unique disease-resistant coffee variety in Honduras. It has high yields, short plants that are easy to harvest, and strong resistance to leaf rust. It is suitable for cultivation in warmer climates and acidic soils, making it widely popular among Honduran farmers.

Catimor was developed in the 1950s by Portuguese scientists as a hybrid of Caturra and Timor Hybrid. It has high yields and strong disease resistance, making it one of the most common varieties worldwide today. However, Catimor was historically rated low in flavor, considered a compromise for disease resistance that couldn't compete with premium varieties. But with advances in cultivation techniques and refined processing methods, whether it's Castillo from Colombia, Sarchimor from Costa Rica, or Catimor from Yunnan and Thailand, cupping scores are often surprisingly impressive, rivaling pure Arabica varieties. Colombia's Castillo once won a COE championship, and a Lempira from Maple Farm ranked 6th in Honduras COE. The flavor potential of disease-resistant varieties should not be underestimated.

This natural Lempira comes from the small Honduran Copan farmer Francis Arturo Romero, who is highly favored by Colonna. The coffee is round and complex, displaying flavors of strawberry, creamy nougat, and almond.
