Sumatra Lake Toba | What is the flavor of Iskandar TP three-times hand-selected coffee?

Initially, Iskandar was grown near Lake Tawar in the Aceh province of Sumatra, processed with technical guidance from La Minita. Produced on Sumatra Island, Indonesia, Iskandar comes from another coffee-producing region near Lake Tawar in Sumatra. La Minita Farm processes some semi-washed coffee beans and conducts strict three rounds of manual hand selection. However, due to conflicts and unrest between Aceh and the government, coffee quality was affected. Later, TP Volpoki Company relocated cultivation to the southern part of Lake Toba. Searching La Minita's official website, this coffee bean is no longer under their name, but it remains a three-times hand-selected bean. The raw beans appear full and beautiful, with a green apple aroma.

Iskandar coffee is produced in North Sumatra Province near Lake Toba in Medan city. La Minita Estate upholds the spirit of meticulous care and responsibility in cultivating and selecting coffee for customers. Through La Minita's exquisite sun-drying techniques and three rounds of manual screening processes, they select the highest quality coffee beans for consumers, creating the unique and perfect flavor of Iskandar coffee. Due to its highly demanding production process that requires significant manpower, they can only provide less than 1,000 bags of coffee annually, making it La Minita Company's outstanding product in Indonesia.

Flavor Profile

When grinding Mandheling coffee, the aroma of grass and dry herbs is very pronounced. The front notes have a lipstick-like cosmetic fragrance, and upon tasting, the dry herb aroma emerges. In the middle notes, dark chocolate and pine appear, with a warm creamy fragrance and a rich, full-bodied texture. Due to three rounds of hand selection that remove defective beans, the cleanliness is excellent, and the aftertaste is also very good. The overall flavor profile is three-dimensional, full, and rich.

  • Dripper: Hario V60
  • Water Temperature: 90°C
  • Grind Size: Fuji grinder setting 3.5

Brewing Method:

Water to coffee ratio 1:15, 15g of coffee. First pour 25g of water for a 25-second bloom. Second pour to 120g water, then stop pouring. Wait until the water level in the coffee bed drops to halfway, then continue pouring slowly until reaching 225g total water. Extraction time approximately 2:00.

Analysis:

Using a three-stage brewing method to clearly distinguish the front, middle, and back flavor notes. Because V60 has many ribs and drains quickly, stopping the pour during brewing can help extend the extraction time.
