Mexican Coffee | What Varieties are in the Nayarit Mi Cielito Natural Sun-Dried Beans?
This group of 10 coffee farmers began collaborating in 2008, focusing on cultivating coffee using sustainable methods to protect the environment, the quality of life of the farmers themselves, and even their communities. They collectively farm approximately 40 square kilometers of land in the Veracruz region. They work diligently to cultivate coffee, hoping that each variety they grow will showcase its most unique and appealing characteristics. To achieve this goal, they adopt solid farming practices during the cultivation phase, select only the most mature coffee cherries during harvest, and apply very rigorous standards when processing the raw beans.
The windward coast of Nayarit is influenced by the northeast monsoon, benefiting from abundant rainfall, fertile volcanic soil, and plentiful water resources. This batch of natural sun-dried coffee from Nayarit's Mi Cielito estate was processed using the natural method, preserving the most original aroma and flavor of the raw beans. Mexico is also one of the largest producers of certified organic coffee, with most of its coffee exported to the United States due to geographical factors. The country's coffee industry began in the 19th century, with most cultivation being Arabica varieties. Over two million Mexicans depend on coffee for their livelihood. 75% of Mexico's small coffee farmers cultivate coffee on plots smaller than two hectares, and these small farmers produce approximately 30% of the country's annual coffee output, with the remainder produced by large or high-capacity farms.

Dripper: Hario V60
Water Temperature: 90°C
Grind Size: Fuji Royal R-440 grind setting 3.5
Brewing Method: Water-to-coffee ratio 1:15, using 15g of coffee grounds. First pour 25g of water for a 25-second bloom. Second pour to 120g and pause. Wait until the water level in the coffee bed drops to halfway, then slowly pour until reaching 225g total. Extraction time approximately 2:00.
